Step 1- Freeze the Raspberries
Lay the fresh raspberries out over a rimmed baking sheet lined with parchment paper. Spreading them in a single layer helps them freeze evenly instead of clumping together.
Step 2- Let Them Freeze Solid
Freeze the raspberries until completely solid, which takes at least 2 to 3 hours. Leaving them overnight works just as well if you want to spread this out over two days.
Step 3- Blend Everything Together
Place the frozen raspberries into a food processor or heavy-duty blender, along with the maple syrup and lemon juice. Blend until smooth, scraping down the sides as needed.
Step 4- Add Water If Necessary
If the mixture feels too thick to blend smoothly, add a little warm water and press down with a spatula to help things along. You want a smooth, scoopable consistency without adding so much water that it turns watery.
Step 5- Serve or Freeze Further
Eat the sorbet immediately for a softer, more sorbet-like texture, or transfer it to a freezer-safe container and freeze for 3 to 4 hours until firm. Both textures taste great, so it really comes down to personal preference.
