Air Fryer Tofu Nuggets

Air Fryer Tofu Nuggets

If someone had told me five years ago that tofu could produce a nugget with a genuinely crispy, shatteringly crunchy exterior and a chewy, savory center that holds up to aggressive dipping, I would have been skeptical. Very skeptical. But here we are, and these Air Fryer Tofu Nuggets have completely changed how I think about plant-based finger food. Golden, boldly seasoned, and satisfying in a way that makes you forget entirely that there's no chicken involved.

Ingredients

  • Let's break this down by component because there are a few moving parts:
  • The Tofu:
  • 1 14 oz / 400g package extra-firm or super-firm tofu- frozen then thawed, then cut into 16 cubes
  • For the Marinade:
  • ¾ cup vegetable broth
  • 2 tablespoons nutritional yeast flakes - this is the flavor backbone; it adds a savory cheesy, umami depth that makes the tofu taste seasoned all the way through
  • 1 tablespoon soy sauce
  • ½ teaspoon ground cumin
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • For the Wet Batter:
  • 1 cup unsweetened unflavored non-dairy milk - oat milk or soy milk both work well here
  • 1 teaspoon white vinegar - this curdles the milk slightly to create a vegan buttermilk effect that helps the breading adhere
  • ¼ cup all-purpose flour
  • 2 tablespoons ground flaxseed - acts as a binder that holds the batter together and gives it body
  • ½ teaspoon salt
  • For the Dry Breading:
  • ½ cup all-purpose flour
  • ½ cup cornstarch -this is what creates the truly crispy outer crust; don't substitute it out
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • For Frying:
  • ⅓ cup canola oil- or more as needed

Equipment

  • Here's everything you need to make these properly:
  • Freezer-safe container or zip-lock bag - for the initial freeze of the tofu. Freeze the whole block in its packaging or transfer to a bag. This step happens well before cooking, so plan accordingly.
  • Kitchen towel or paper towels - for gently pressing the thawed tofu to remove excess water before marinating. Drier tofu absorbs the marinade better.
  • Shallow dish- for marinating the tofu cubes so every surface gets maximum contact with the marinade.
  • Two medium bowls - one for the wet batter, one for the dry breading mixture. You need separate bowls to make the double-coating process work cleanly.
  • Medium non-stick skillet - for pan-frying the breaded tofu nuggets in oil. A non-stick surface gives you more control over browning without the breading sticking to the pan.
  • Tongs or a fork -for turning the nuggets in the oil without disturbing the breading.
  • Paper towel-lined plate - for draining the cooked nuggets after frying to remove excess oil.
  • Measuring cups and spoons - the marinade and batter ratios matter here, so measure accurately the first time through.
  • Small whisk - for getting the batter completely smooth without lumps.

Method

  1. Phase 1 - Freeze and Thaw the Tofu
  2. Place your unopened block of extra-firm tofu in the freezer for at least 6 hours, preferably overnight. When you're ready to cook, remove it and let it thaw completely at room temperature or in the fridge overnight. Once thawed, press the tofu gently in a kitchen towel to squeeze out excess water, then cut it into 16 even cubes.
  3. Phase 2 - Marinate the Tofu
  4. Stir all the marinade ingredients together in a small container until combined. Place the tofu cubes in a shallow dish and pour the marinade over them. Let the tofu marinate for 30 minutes at room temperature, turning the pieces every 8–10 minutes so every surface soaks up the flavor. The tofu will visibly absorb the liquid and deepen in color as it sits.
  5. Phase 3 - Prepare the Batter and Breading
  6. Whisk all the wet batter ingredients together in one bowl until completely smooth. Let the mixture sit for 5–10 minutes this gives the flaxseed time to thicken the batter slightly, which helps it cling to the tofu better.
  7. While the batter rests, whisk the dry breading ingredients together in a separate bowl. Make sure the cornstarch, flour, and spices are evenly distributed throughout.
  8. Phase 4 - Bread the Tofu (The Double-Coat Method)
  9. This is the most important technique in the recipe. Here's the exact sequence:
  10. Remove a tofu cube from the marinade give it one final roll through the marinade liquid just before lifting it out.
  11. Roll the tofu in the dry breading mixture until evenly coated on all sides.
  12. Transfer the breaded tofu to the wet batter and roll it around until fully coated.
  13. Return the tofu to the dry breading and roll it a second time for a double coat.
  14. Set aside and repeat for the remaining cubes.
  15. The double-coat is what gives these nuggets their thick, substantial crust that stays crispy and doesn't dissolve the moment it touches sauce.
  16. Phase 5 - Fry Until Golden
  17. Pour at least ⅛ inch of canola oil into your medium non-stick skillet and set it over medium heat. Wait until the oil shimmers before adding any tofu oil that isn't hot enough makes the breading absorb oil and go greasy rather than crisp.
  18. Cook the nuggets in batches and don't crowd the pan. Fry each batch for about 4 minutes per side until deeply golden brown and crunchy on all surfaces. Transfer cooked nuggets to a paper towel-lined plate to drain, and add more oil between batches as needed.
  19. Phase 6 - Serve
  20. Serve the tofu nuggets hot with vegan barbecue sauce, sriracha mayo, vegan ranch, or any dipping sauce you love. They're best eaten immediately when the crust is at peak crunch.
