  • Large slow cooker (4–6 quart)- the primary equipment for this recipe. A 4-quart handles 2 pounds of vegetables with the diced tomatoes and sauce comfortably. A 6-quart gives you room to add extra vegetables or scale the recipe up without crowding. Crowded vegetables steam rather than slow-cook, which affects the final texture and flavor concentration.
  • Medium mixing bowl and whisk - for combining all the sauce ingredients before pouring them over the vegetables. Whisking the sauce separately ensures even distribution of the olive oil, which doesn't incorporate naturally without agitation.

Method
 

  1. Slow Cooker Method
  2. Step 1 - Layer the base. Add the can of diced tomatoes liquid and all directly to the bottom of your slow cooker. This liquid base prevents anything from sticking during the first hour of cooking and infuses the vegetables with tomato flavor throughout the entire cook. Spread the chopped vegetables evenly over the tomatoes.
  3. Step 2 - Make and pour the sauce. In a medium bowl, whisk together the coconut aminos, lemon juice, olive oil, oregano, salt, pepper, garlic powder, and onion powder until fully combined. The olive oil will emulsify partially with the lemon juice during whisking whisk vigorously for 30 seconds to get as complete an integration as possible. Pour the sauce evenly over the vegetables, making sure every piece gets coated. You can stir everything together at this point or leave it layered both approaches work.
  4. Step 3 - Cook. Cover and cook on HIGH for 3 hours or LOW for 6 hours until the vegetables reach your preferred tenderness. The sauce will concentrate and deepen during the long cook, becoming richer and more flavorful than it was going in.
  5. Step 4 - Stir and serve. Give everything a thorough stir before serving if you haven't already. The sauce at the bottom has concentrated during cooking stirring redistributes it evenly through all the vegetables.
