Creamy Vegan Avocado Gazpacho

So, you want a soup that requires zero cooking, takes about 10 minutes, and tastes like something straight out of a fancy Spanish restaurant? Yeah, I thought so. Creamy Vegan Avocado Gazpacho is exactly that — cold, silky, ridiculously refreshing, and completely plant-based. No stove. No stress. Just pure summer bliss in a bowl.

Ingredients

  • 2 ripe avocados — the creamier the better
  • 1 large cucumber — peeled and roughly chopped
  • 2 cups cold vegetable broth — use a good-quality one
  • 2 tablespoons fresh lime juice — about 1 large lime
  • 1 small garlic clove — just one; we're not making garlic soup
  • Optional but highly recommended add-ins:
  • Fresh cilantro or mint
  • A pinch of sea salt and black pepper
  • A drizzle of extra virgin olive oil for serving
  • Jalapeño for a little kick

Equipment

  • High-speed blender (a Vitamix or similar works best for ultra-smooth texture)
  • Cutting board and knife
  • Measuring cups and spoons
  • Serving bowls or glasses (yes, you can serve this as a chilled drink too!)
  • Plastic wrap or lid for chilling in the fridge
  • That's it. No pots, no pans, no mess.

Method

  1. Step 1: Prep Your Ingredients
  2. Peel and pit both avocados. Peel your cucumber and chop it roughly — no need to be precise here since everything goes in the blender anyway. Peel your garlic clove and squeeze that lime juice fresh if you can.
  3. Step 2: Blend Everything Together
  4. Add the avocados, cucumber, cold vegetable broth, lime juice, and garlic to your blender. Blend on high for about 60 seconds until the mixture is completely smooth and creamy. Scrape down the sides if needed and blend again for another 20 seconds.
  5. Taste it. Need more lime? Add it. Want more salt? Go for it. This is your soup — make it exactly how you like it.
  6. Step 3: Adjust the Consistency
  7. Too thick? Add a splash of more vegetable broth and blend briefly. Too thin? Add another half avocado and blend again. The ideal texture is somewhere between a smoothie and a traditional soup — thick, pourable, and silky.
  8. Step 4: Chill Before Serving
  9. Pour the gazpacho into a bowl or container, cover it, and refrigerate for at least 30 minutes. This step makes a huge difference — chilling allows the flavors to meld together and gives you that proper cold-soup experience.
  10. Can you skip this step? Technically yes, especially if your ingredients were already cold. But trust me — chilling it makes it so much better.
  11. Step 5: Serve and Garnish
  12. Pour into chilled serving bowls or glasses. Top with a drizzle of olive oil, a few fresh herb leaves, a crack of black pepper, or even some diced cucumber and cherry tomatoes for texture. Serve immediately and enjoy.
