Creamy Vegan Strawberry Overnight Oats

Creamy Vegan Strawberry Overnight Oats Summer Breakfast

What if your overnight oats actually tasted like strawberries — not just had a few strawberry slices sitting on top, but genuinely, deeply, pink-all-the-way-through tasted like strawberries? That's exactly what these Creamy Vegan Strawberry Overnight Oats deliver, and the trick behind it is one of those simple ideas that makes you wonder why every overnight oats recipe doesn't do this.

Ingredients

  • 1 cup gluten-free rolled oats
  • 1 cup plant-based milk almond, coconut, oat — your choice
  • 2 teaspoons chia seeds
  • ¼ cup freeze-dried strawberries divided
  • 2 teaspoons maple syrup
  • 1 teaspoon vanilla extract
  • Fresh strawberries for garnish

Equipment

  • A jar or bowl with a lid or cover — a pint-sized mason jar is the classic choice and works perfectly. The lid keeps the oats fresh and allows you to grab and go in the morning. A bowl covered with cling film or a plate works just as well.
  • A spoon or small spatula for stirring everything together
  • A small zip-lock bag and rolling pin — for crushing the freeze-dried strawberries into powder. Alternatively, your fingers work perfectly — freeze-dried strawberries crumble very easily.
  • Measuring cups and spoons for accuracy
  • A knife and chopping board for slicing the fresh strawberry garnish
  • No blender, no hob, no oven. The most complex piece of equipment involved is a rolling pin, and even that's optional. This is genuinely one of the simplest breakfast recipes you can make.

Method

  1. Step 1: Take half of your freeze-dried strawberries (roughly 2 tablespoons) and pulverise them into a fine powder. You can do this by placing them in a small zip-lock bag and using a rolling pin to crush them, or simply by rubbing them between your fingers — freeze-dried fruit is light and crisp and breaks down very easily.
  2. Step 2: Add everything — the rolled oats, plant milk, chia seeds, the remaining whole freeze-dried strawberries, the strawberry powder, maple syrup, and vanilla extract — into a jar or bowl. Stir well until everything is fully combined and the strawberry powder has dissolved into the milk, turning it a soft pink colour.
  3. Step 3: Cover the jar or bowl and refrigerate for at least 3 hours, or overnight.
  4. Step 4: In the morning, give it a stir. If the oats seem thicker than you'd like, add a small splash of plant milk and stir again. Top with fresh sliced strawberries and any other toppings you enjoy. Eat cold, straight from the jar.
  5. That's five minutes of active work, and the fridge does everything else.
