Stage 1 - Crumble and Season the Tofu
Using your fingers, crumble the pressed tofu into a large bowl, breaking it into irregular, bite-sized pieces rather than a uniform texture irregular pieces have more surface area and brown more interestingly.
Add the nutritional yeast, chili powder, garlic powder, and turmeric directly to the bowl with the tofu and mix thoroughly until every piece is evenly coated in the golden spice blend.
Stage 2 - Cook the Onion and Tofu
Heat your nonstick or lightly greased pan over medium heat. Add the diced onion and cook for 3 minutes, until softened.
Add the seasoned tofu to the pan. Here's where you build in the "crispy" the title promises: rather than stirring constantly, let the tofu sit undisturbed in a single layer for 2–3 minutes at a time before stirring, repeating this pattern over the full 5-minute cook time. This undisturbed contact with the hot pan is what produces genuinely crispy, golden edges rather than just soft, steamed crumbles.
Stage 3 - Add the Kale
Add the chopped kale to the pan and continue cooking for 5 more minutes, stirring occasionally, until the kale wilts down significantly and the tofu is cooked through with good color throughout.
Stage 4 - Make the Chimichurri (If You're Adding It)
While the tofu cooks, or right before assembly, blend or finely chop the parsley, oregano, garlic, olive oil, red wine vinegar, and red pepper flakes together until you have a chunky, herby sauce. Taste and adjust the vinegar or salt as needed.
Stage 5 - Assemble the Burritos
Place the tofu scramble into each tortilla. Top with salsa and avocado, and drizzle the chimichurri over the filling if you made it. Fold and roll into a burrito.
