Step 1 — Build Your Flavor Base (5 Minutes)
Heat 2 tablespoons of avocado oil in your stock pot over medium heat. Once it shimmers, add the bell peppers, onion, jalapeño, garlic, chickpeas, and taco seasoning all at once. Cook everything together for about 5 minutes, stirring frequently. You want the veggies to soften slightly and the seasoning to coat every single chickpea. Your kitchen will smell incredible at this point you've been warned.
Step 2 — Simmer It All Together (10–20 Minutes)
Add the fire-roasted tomatoes, green chiles, and broth to the pot. Stir everything together and crank the heat until it reaches a boil. Once boiling, partially cover the pot, lower the heat, and let it simmer for 10 to 20 minutes. The longer you let it go, the deeper the flavors get. I usually aim for the full 20 minutes when I have the time.
Step 3 — Finish Strong
Squeeze in the lime juice and stir in the chopped cilantro. Give the soup a taste and adjust the seasoning more taco seasoning, more lime, more salt. You're the chef here, so trust your palate. This finishing step takes about 2 minutes but makes a noticeable difference in brightness and freshness.
Step 4 — Bowl It Up
Ladle the soup into bowls and pile on those toppings. This is the fun part.
