Step 1 - Load the Slow Cooker (10 Minutes)
Add all ingredients except the bok choy and noodles to the slow cooker both mushroom varieties, sliced onion, minced garlic, chopped carrots, cubed super firm tofu, broth, soy sauce, rice vinegar, sesame oil, and ground ginger. Stir everything together to combine the seasonings evenly throughout the broth. Put the lid on and you're done with active work for the next four hours.
Step 2 - Cook Low and Slow
Cook on high for 4 hours or low for 8 hours. The mushrooms will release their flavor into the broth, the tofu will absorb the seasoned liquid, and the carrots will become perfectly tender. The soup develops real depth during this time don't rush it by checking or stirring frequently. Leave it alone and let it work.
Step 3 - Add Bok Choy and Noodles (Last 3–5 Minutes)
This timing is critical. Add the bok choy and noodles only in the final 3–5 minutes of cook time no earlier. Bok choy wilts fast and should retain a slight tenderness and bright color. Noodles, especially soba-style, cook extremely quickly in hot broth and turn mushy within minutes of being overdone.
Switch the slow cooker to low, add the bok choy and noodles, replace the lid, and cook for 3–5 minutes only. Check at 3 minutes and stir to make sure the noodles are cooking evenly.
Step 4 - Taste, Adjust, and Serve
Once the noodles are cooked through, taste the broth and adjust seasoning as needed — more soy sauce for salt, a splash more rice vinegar for brightness, or a drizzle of sesame oil for richness. Ladle into bowls and top generously with sliced green onion, toasted sesame seeds, and chili oil. Serve immediately.
