Step 1 - Combine Everything in the Slow Cooker
Add your soaked and rinsed Great Northern beans to the slow cooker first. Then add the carrots, onion, celery, garlic, fresh rosemary, dried sage, and black pepper. Pour in the 4 cups of vegetable broth and 2 cups of water. Stir everything together to combine evenly. Tuck 1–2 bay leaves into the soup, then put the lid on.
Notice you're not adding salt yet salt added too early can toughen the bean skins during cooking. You'll add it at the end when the beans are fully tender.
Step 2 - Choose Your Texture and Cook Accordingly
This is where you decide what kind of soup you want:
Brothy and lighter: Cook on HIGH for 4–5 hours
Thick and stew-like: Cook on HIGH for 6–8 hours
The longer you cook, the more the beans break down and thicken the broth naturally. You can also speed this up by gently mashing some beans against the side of the pot with your spoon once they're tender this releases starch and thickens the broth quickly without any blending.
Step 3 - Finish and Serve
Remove and discard the bay leaves. Season with ½ teaspoon kosher salt, then taste and adjust more pepper, more rosemary, or a little extra salt as needed. If you want to brighten the whole bowl, stir in 1–2 teaspoons of fresh lemon juice or apple cider vinegar right before serving. This step is optional but makes a noticeable difference in how fresh and vibrant the soup tastes.
Ladle into bowls and garnish with fresh parsley, extra rosemary, or a light drizzle of extra virgin olive oil.
