  • A handful of fresh coriander cilantro, chopped for the herby finish that brightens the whole salad.
  • For the Smoky Chipotle-Lime Dressing:
  • 3 tablespoons extra-virgin olive oil
  • 2 –3 tablespoons lime juice adjusted to taste fresh squeezed for the brightest result.
  • 1 tablespoon Cholula Chipotle hot sauce or a few drops of Smoky Tabasco, adjusted to taste this is where the smoky heat comes from. Both Cholula Chipotle and Smoky Tabasco are typically vegan, but worth a quick label check since formulations occasionally vary by region.
  • 1 teaspoon maple syrup - balances the heat and acid with a touch of rounded sweetness.
  • 1 garlic clove finely grated adds a sharp, savory depth that ties the whole dressing together.

  • Griddle pan or grill - essential for getting real char on the corn and zucchini. A ridged stovetop griddle pan works just as well as an outdoor grill if you're cooking indoors. Without this step, the salad loses its smoky depth entirely.
  • Sharp chef's knife and cutting board - you'll be doing a genuine amount of chopping here: radishes into matchsticks, cucumber into quarter slices, tomatoes into quarters, pepper and avocado into large dice, celery and snap peas into thin diagonal slices. A sharp knife makes this go quickly and produces cleaner cuts.
  • Small frying pan - for toasting the almonds. A dry or lightly oiled small pan over low heat is all you need; this step takes only a few minutes but adds genuine flavor.
  • Large mixing bowl - wide enough to hold all the chopped vegetables, the charred corn and zucchini, and the dressing with room to toss thoroughly without spilling.
  • Small bowl or jar - for whisking together the dressing ingredients before pouring over the salad.
  • Pastry brush - for brushing the corn and zucchini lightly with olive oil before they hit the griddle.

Method
 

  1. Stage 1 - Char the Corn
  2. Heat your griddle pan on low heat. Brush the corn lightly with olive oil and place it on the preheated griddle. Grill, turning every few minutes, until cooked through and lightly charred all over this takes about 8–10 minutes total. Once it's cool enough to handle, shave the kernels off the cob with a sharp knife, working from top to bottom in clean strokes.
  3. Stage 2 - Char the Zucchini
  4. Brush the zucchini slices with a small amount of oil on both sides, season lightly with salt, and sprinkle with the Cajun spice. Place on the hot griddle and let it cook undisturbed until you see real char marks develop on one side resist the urge to move it around constantly. Flip once and repeat on the second side. Remove from the griddle, let cool, and chop into smaller, bite-sized pieces.
  5. Stage 3 - Prep the Remaining Vegetables
  6. While the corn and zucchini cool, prepare everything else, cut the radishes into matchsticks, the cucumber into quarter slices, the tomatoes into quarters, the red pepper and avocado into large dice, and the celery and sugar snap peas into thin diagonal slices. Taking the time to cut everything to a roughly similar size means every bite of the finished salad has a balanced mix of textures rather than some forkfuls being mostly cucumber and others mostly tomato.
  7. Toast the almonds- heat a small frying pan on low heat, add a teaspoon of olive oil, then the almonds. Toss to coat and toast, tossing occasionally, until lightly charred about 3–4 minutes. Sprinkle with a pinch of salt, set aside to cool, then chop roughly once cooled.
  8. Stage 4 - Combine, Dress, and Garnish
  9. Whisk together all the dressing ingredients - olive oil, lime juice, chipotle hot sauce, maple syrup, grated garlic, salt, and pepper until smooth. Taste it directly: does it need more heat, more lime, more sweetness? Adjust now.
  10. Combine all the salad ingredients- the charred corn and zucchini, all the chopped vegetables, and the avocado in your large mixing bowl. Drizzle with the dressing and toss gently to coat everything evenly. Decorate with the fresh coriander and toasted chopped almonds on top right before serving.
