Step 1-Mix the Dry Ingredients
Add the correctly measured corn flour, baking powder, sugar, and salt to a medium bowl. Whisk them together until completely combined and no lumps of baking powder remain. The whisking step is important clumps of baking powder in the finished batter produce uneven rising and occasionally bitter spots in the pancakes.
Step 2 -Add the Wet Ingredients
Pour the plant-based milk and vanilla extract into the dry ingredients. Mix together well until a smooth, uniform batter forms. The batter will be thicker than typical all-purpose flour pancake batter this is correct. Corn flour absorbs liquid differently and produces a denser batter that creates the pancakes' characteristic texture.
Let the batter rest for 2 minutes while you heat the pan. This brief rest allows the baking powder to activate slightly and the corn flour to fully hydrate.
Step 3 - Heat the Pan Correctly
Place your griddle or skillet over medium-low heat. Add a drizzle of mildly flavored oil or a small piece of vegan butter and let it melt and spread across the surface. You want the pan hot enough that a drop of batter sizzles immediately on contact, but not so hot that oil starts smoking.
Testing pan temperature: Drop a tiny amount of batter into the pan. If it sizzles gently and immediately starts to set around the edges, the temperature is right. If it sits without sizzling, the pan needs more time. If it immediately browns, reduce the heat.
Step 4 - Cook the Pancakes
Pour ⅓ cup (80ml) of batter per pancake into the hot pan. Work in batches that fit comfortably typically 2–3 pancakes per batch depending on your pan size. If using Method 2 for blueberries, place them on the batter surface now.
The crucial instruction: Leave the pancakes completely undisturbed until bubbles form around the edges and the batter looks slightly set around the perimeter not until bubbles appear all over the top. With corn flour pancakes, waiting for bubbles across the entire surface results in overcooked pancakes. The edge-bubble signal is enough.
This typically takes 2–3 minutes on medium-low heat.
Step 5 -Flip and Finish
Flip gently with your wide spatula corn flour pancakes need confident, decisive flipping rather than hesitant partial flips. Cook the second side for just 30 seconds or so until lightly golden. Don't overcook the second side corn flour pancakes dry out quickly on overcooked second sides, losing the tender center that makes them exceptional.
Remove immediately from the pan and serve. These pancakes are best eaten fresh off the griddle.
