Easy Vegan Crockpot Burrito Bowls

These easy vegan crockpot burrito bowls have everything you love about the restaurant version seasoned black beans, cilantro lime rice, sautéed fajita vegetables, fresh pico de gallo, corn salsa, and creamy avocado all built from scratch with whole ingredients and zero compromise. I've made this on weeknights when I had barely any energy left, and it still came together in under 30 minutes. That's the kind of recipe that earns real loyalty.

Ingredients
  

  • Fajita Vegetables
  • 2 tbsp olive oil or ¼ cup water for oil-free
  • 2 bell peppers any color, cored and thinly sliced
  • 1 small white onion thinly sliced
  • ¼ tsp dried oregano
  • Pinch of mineral salt
  • To Serve
  • 2 cans 15 oz black beans, drained and rinsed (or 3 cups home-cooked)
  • 1 batch cilantro lime rice or 3 cups cooked rice of choice
  • 2 heads romaine lettuce shredded (about 3–4 cups)
  • Corn salsa
  • Pico de gallo
  • 1 –2 avocados mashed or sliced
  • Lime wedges

Equipment

  • Nothing complicated here just a few kitchen basics:
  • Large skillet or sauté pan - for cooking the fajita vegetables
  • Medium saucepan - for the cilantro lime rice
  • Can opener - if you're using canned black beans
  • Instant Pot or pressure cooker (optional) — if cooking beans from scratch
  • Knife and cutting board - for prepping peppers, onions, and avocado
  • Measuring cups and spoons
  • Large serving bowls - deep and wide enough to hold all the components generously
  • The skillet matters more than people think. A wide, heavy-bottomed pan gives the peppers and onions proper contact with the heat, which means they soften and caramelize properly rather than just steaming. A thin pan with too many vegetables crowded in will steam everything instead of sauté it and you'll taste the difference.

Method
 

  1. Start the beans first. If cooking from scratch in an Instant Pot, get them going first they take about 60 minutes total. If you're using canned beans, simply drain and rinse them. Done. No further action required.
  2. Cook the rice. Cilantro lime rice takes 25–30 minutes from start to finish, so start it after the beans are sorted. If you're using canned beans, you can start the rice straight away since you're not waiting on anything.
  3. Sauté the fajita vegetables. While the rice cooks, heat olive oil or water in a large skillet over medium heat. Add the sliced onions, bell peppers, oregano, and a pinch of salt. Sauté for about 10 minutes, stirring occasionally, until everything is soft, tender, and slightly caramelized. Remove from heat.
  4. Assemble the bowls. In each bowl, add approximately ¾ cup of rice, ¾ cup of black beans, ¼ to ⅓ cup of corn salsa or pico de gallo, and one quarter of the fajita mixture. Add a handful of shredded romaine and a quarter of an avocado, mashed or sliced.
  5. Finish and serve. Squeeze fresh lime juice over each bowl, add a pinch of salt and a dash of red pepper flakes. Add any additional toppings and serve immediately.
