Ingredients

  • The Filling:
  • 15 oz black beans drained and rinsed
  • 15 oz corn — canned drained and rinsed or frozen
  • ½ cup onion diced
  • 2 garlic cloves minced
  • 4 oz diced green chiles — canned works perfectly
  • 4 cups shredded vegan cheddar cheese
  • 4 medium-size tortillas — flour or corn both work
  • 2 cups enchilada sauce — store-bought or homemade
  • The Seasoning Blend:
  • 1½ teaspoons chili powder
  • 1½ teaspoons cumin
  • 1 teaspoon salt or more to taste
  • 1 teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Equipment

  • For the Slow Cooker Method
  • 6-quart slow cooker — the standard size handles this batch perfectly with room for proper layering. A smaller crockpot risks overflow and uneven cooking.
  • Cooking spray — essential for coating the slow cooker insert generously before layering. This prevents sticking and makes serving significantly cleaner.
  • Large mixing bowl — for combining the filling ingredients before layering
  • Wooden spoon or silicone spatula — for mixing and spreading each layer
  • Can opener — for the black beans, corn, and green chiles
  • Knife and cutting board — for dicing the onion and mincing the garlic.
  • Measuring spoons and cups
  • For the Oven Method
  • 9x13 inch baking dish — the standard casserole size that fits the layers perfectly
  • Cooking spray for the baking dish
  • Same mixing bowl, spoon, and prep tools as above
  • Oven preheated to 375°F

Method

  1. Step 1 — Mix the filling. Add the drained black beans, drained corn, diced onion, minced garlic, diced green chiles, enchilada sauce, and all the seasonings to a large bowl. Stir everything together until the ingredients distribute evenly and every bean and kernel gets coated in that spiced enchilada sauce. Take a moment to smell this mixture — it already smells incredible and nothing has even started cooking yet.
  2. Step 2 — Prep the slow cooker. Spray your 6-quart slow cooker insert generously with cooking spray. Don't be stingy here — proper greasing makes the difference between a casserole that releases cleanly and one that sticks stubbornly to the sides. Coat the bottom and at least halfway up the sides.
  3. Step 3 — Layer one. Spread one-third of the filling mixture evenly across the bottom of the slow cooker. Top with one-third of the shredded vegan cheese. Add 2 tortillas on top, overlapping them in the center as needed to cover the layer. Don't stress about getting a perfect fit — overlapping is completely fine and the tortillas will soften and conform to the shape during cooking.
  4. Step 4 — Layer two. Spread another one-third of the filling mixture over the tortillas. Add another one-third of the cheese. Top with the remaining 2 tortillas.
  5. Step 5 — Final layer. Spread the remaining one-third of the filling over the top tortillas. Finish with the remaining one-third of cheese spread evenly across the top. This top cheese layer melts down into the casserole during cooking and creates that irresistible golden, bubbly surface.
  6. Step 6 — Cook. Cover and cook on HIGH for 2–3 hours or LOW for 4–6 hours. The casserole is ready when the cheese melts completely, the filling bubbles around the edges, and the tortillas have softened into the layers.
  7. Oven Method
  8. Step 1 — Preheat your oven to 375°F. Spray a 9x13 inch baking dish thoroughly with cooking spray.
  9. Step 2 — Mix the filling in a large bowl exactly as described above — beans, corn, onion, garlic, green chiles, enchilada sauce, and all seasonings.
  10. Step 3 — Layer exactly the same way: one-third filling, one-third cheese, 2 tortillas. Repeat. Finish with the remaining filling and cheese on top.
  11. Step 4 — Bake uncovered for 30 minutes until the cheese bubbles actively and begins to turn golden around the edges. Let it rest for 5 minutes before serving — this helps the layers set and makes scooping considerably cleaner.
