Ingredients

  • 3 tablespoons extra-virgin olive oil divided (2 tablespoons for cooking, 1 for the ricotta mix)
  • 1 medium yellow onion finely chopped
  • 8 ounces sliced cremini mushrooms
  • 1 medium zucchini thinly sliced into half moons
  • 3-4 garlic cloves minced (about 1½ tablespoons)
  • 3 tablespoons tomato paste for concentrated flavor
  • Pinch of crushed red pepper flakes optional, for heat
  • 1 tablespoon Italian seasoning dried herbs
  • 1 teaspoon kosher salt divided (plus more to taste)
  • 1 28-ounce can crushed tomatoes with basil
  • 1 15-ounce can navy beans, rinsed and drained
  • 4 cups vegetable broth or chicken-style vegetable broth
  • 2 cups water in addition to the broth
  • 6 ounces dry lasagna noodles broken into small pieces (about 7 sheets)
  • ½ cup grated vegan parmesan cheese divided (¼ cup for ricotta, ¼ cup for finishing)
  • 2 tablespoons finely chopped fresh parsley
  • 1¼ cups vegan whole-milk ricotta cheese like Kite Hill or Tofutti
  • 2 tablespoons chopped fresh basil or additional parsley

Equipment

  • Large stockpot or Dutch oven (at least 5-quart capacity—this is the "one pot" in "one pot wonder")
  • Chef’s knife and cutting board
  • Measuring cups and spoons
  • Wooden spoon or spatula (for stirring)
  • Small bowl (for the ricotta mixture)
  • Can opener (for those canned ingredients)
  • Ladle for serving
  • Nice-to-Have Items
  • Soup bowls (beautiful ones make the experience better)
  • Kitchen towel (for protecting your hands while serving)
  • Grater (if you want to grate vegan parmesan fresh)

Method

  1. Step 1: Build Your Vegetable Base (9 Minutes)
  2. Heat 2 tablespoons of olive oil in a large stockpot or Dutch oven over medium heat. Add the chopped onion and cook for 4 minutes, stirring occasionally, until it becomes soft and translucent. Add the sliced mushrooms and zucchini, and cook for 5-7 more minutes, stirring occasionally, until they're golden and tender.
  3. Why this order? The onion needs time to soften and release its sugars first. Then the mushrooms and zucchini add their earthy, umami flavors while developing slight caramelization. Together, they create a flavor foundation that's already delicious before you add anything else.
  4. Step 2: Add Aromatics and Paste (2 Minutes)
  5. Stir in the minced garlic, tomato paste, and red pepper flakes. Cook for about 2 minutes, stirring frequently, until the tomato paste turns brick red (a darker shade than it started) and the garlic becomes aromatic. Season with ½ teaspoon of salt.
  6. This step is crucial. When tomato paste cooks with the vegetables, it develops deeper, caramelized flavors that just straight tomato sauce can't match. You're essentially cooking the paste, not just stirring it in.
  7. Step 3: Build the Broth (Combine and Bring to Boil)
  8. Stir in the crushed tomatoes (with their juices), navy beans, vegetable broth, and 2 cups of water. Season with the remaining ½ teaspoon of salt. Bring the mixture to a boil over medium-high heat.
  9. Step 4: Add the Pasta and Simmer (12 Minutes)
  10. Once the liquid is boiling, add your broken-up lasagna noodles. Reduce the heat to medium-low and gently simmer, uncovered, stirring occasionally, for about 12 minutes. The noodles will soften as they cook, absorbing all that gorgeous broth and becoming tender without turning mushy.
  11. You're aiming for a gentle simmer here, not a rolling boil. This prevents the noodles from breaking apart too much and keeps the soup from becoming too thin.
  12. Step 5: Prepare the Ricotta Mixture (While Soup Simmers)
  13. While your soup is simmering, combine the vegan ricotta, ¼ cup vegan parmesan, fresh basil (or parsley), and 1 tablespoon of olive oil in a small bowl. Season with a few grinds of cracked black pepper. Mix until smooth and creamy. This is your luxurious topping that makes everything feel special.
  14. Step 6: Finish and Serve
  15. Once the soup is done, remove it from heat. Stir in the fresh parsley and remaining ¼ cup of vegan parmesan. Taste and season with additional salt if needed—remember, the ricotta you'll add has salt too, so don't overdo it.
  16. Ladle the soup into bowls and top each serving with a generous dollop of the ricotta mixture. Garnish with extra vegan parmesan and fresh herbs if you're feeling fancy, plus a drizzle of good olive oil.
