Easy Vegan Mango Coconut Overnight Oats Summer Breakfast

Okay, real talk — how many times have you woken up, stared at your fridge, and thought, "I genuinely cannot be bothered right now"? Same. Mornings shouldn't require a culinary degree or a 45-minute commitment just to eat something decent. That's exactly why these Easy Vegan Mango Coconut Overnight Oats have taken over my entire summer morning routine

Ingredients
  

  • 1 ripe mango cut into cubes
  • 240 ml plant-based milk oat, almond, or coconut all work brilliantly
  • 100 g Linwoods Energy Overnight Oats or plain rolled oats + 2 tbsp chia seeds
  • 1 lime — zest and juice
  • 60 g thick dairy-free yoghurt plus extra for serving
  • 2 tbsp desiccated coconut
  • 2 tbsp chopped pistachios and/or mixed seeds
  • 2 tbsp maple syrup

Equipment

  • A large mixing bowl
  • A small blender or NutriBullet
  • A sharp knife and chopping board
  • Kitchen scales or measuring cups
  • 2 tall jars or glasses for serving
  • Your fridge (obviously)

Method
 

  1. Step 1: Add 100g of mango cubes to a small blender with the plant-based milk and blend until smooth and creamy. Set the remaining mango cubes aside — those are for topping later.
  2. Step 2: Into a large bowl, add the oats, lime zest and juice, dairy-free yoghurt, desiccated coconut, and the blended mango milk. Stir everything together well, then cover and pop it in the fridge overnight. You can keep this in the fridge for 2–3 days, so it's brilliant for meal prep.
  3. Step 3: When ready to serve, spoon a layer of extra yoghurt into 2 jars. Top with the creamy mango oats, add another dollop of yoghurt, the reserved mango cubes, a scatter of crushed pistachios and/or seeds, and a drizzle of maple syrup.
  4. Step 4: Enjoy straight away, or cover and keep in the fridge for another 1–2 days.
  5. Note: If you're using plain oats instead of Linwoods, add 2 tbsp chia seeds to the mix. They swell overnight and give you that thick, pudding-like consistency. Don't skip this — trust me.

These figures shift a little depending on which plant milk and yoghurt you use — full-fat coconut yoghurt pushes the calories up, while a lighter almond milk yoghurt keeps it leaner. Either way, you're starting the day with something genuinely nourishing. FYI: mangoes are packed with vitamin C, folate, and vitamin A, so this is basically a nutritious powerhouse wearing a tropical disguise.
