Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 medium courgettes zucchini, diced
  • 1 cup fresh or frozen sweetcorn kernels
  • 1 medium red bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1 can 400g cannellini beans, drained and rinsed
  • 1 litre good quality vegetable broth
  • 1 teaspoon dried Italian herbs
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • Juice of ½ lemon
  • Large handful of fresh basil torn
  • Optional for serving:
  • Crusty bread or sourdough
  • Extra virgin olive oil drizzle
  • Vegan parmesan or nutritional yeast

Equipment

  • A large pot or Dutch oven — at least 4–5 litres capacity to hold all the vegetables and broth comfortably. A heavy-bottomed pot distributes heat evenly and prevents the onion from catching and burning during the initial cook.
  • A sharp chef's knife — for dicing the onion, courgette, and pepper efficiently. Good knife work speeds the prep time significantly.
  • A chopping board — large enough to prep all the vegetables without constant clearing
  • A wooden spoon or heatproof spatula — for stirring
  • A ladle — for serving
  • Measuring spoons for the herbs and paprika
  • 4 serving bowls — warmed if possible; a quick rinse with hot water before ladling keeps the soup hot in the bowl longer

Method

  1. Step 1: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened and translucent.
  2. Step 2: Add the minced garlic and cook for another 60 seconds until fragrant. Don't let it burn — garlic goes from golden to bitter very quickly.
  3. Step 3: Add the courgette, red bell pepper, and sweetcorn. Stir everything together and cook for 3 minutes until the vegetables begin to soften slightly.
  4. Step 4: Pour in the vegetable broth. Add the Italian herbs, smoked paprika, salt, and black pepper. Stir to combine and bring to a gentle boil.
  5. Step 5: Add the cherry tomatoes and cannellini beans. Reduce heat to a simmer and cook for 8–10 minutes until all vegetables are tender.
  6. Step 6: Remove from heat. Squeeze in the lemon juice and stir through the torn fresh basil. Taste and adjust seasoning.
  7. Step 7: Ladle into bowls and serve immediately with crusty bread, a drizzle of good olive oil, and extra basil on top.
