Ingredients

  • This recipe makes 6 burritos which is ideal for a solo meal-prepper covering most of a work week, or a couple splitting lunches for a few days.
  • 1 tablespoon high-heat oil
  • 1 yellow onion chopped
  • 2 cloves garlic diced
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • 2 15-ounce cans black beans, drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned all work
  • ½ cup water
  • 2 tablespoons tomato paste
  • 3 cups cooked brown rice
  • 2 limes juiced (plus more to taste)
  • Chopped cilantro optional
  • Salt and pepper to taste
  • 6 burrito-sized tortillas

Equipment

  • Keep it simple. Here's the full equipment list:
  • A medium-sized pan with a lid for cooking the filling
  • Measuring spoons — For the spices.
  • Measuring cups for the beans, corn, rice, and water
  • A knife set for chopping the onion and garlic
  • A microwave-safe plate for softening the tortillas
  • Freezer paper or foil for wrapping the finished burritos
  • That's it. Nothing here requires a special trip to a kitchen supply store.

Method

  1. Step 1- Sauté the Onion and Garlic
  2. In a large pan with a lid, heat the oil over medium heat. Add the chopped onion and cook until translucent, about 3 minutes. Add the garlic and cook for another minute, stirring so it doesn't scorch.
  3. Step 2- Bloom the Spices
  4. Stir in the cumin and smoked paprika, coating the onion and garlic completely. This step only takes about 30 seconds, but it wakes up the spices and gives the whole filling way more depth than just dumping them in later.
  5. Step 3- Simmer the Beans
  6. Add the black beans, corn, water, and tomato paste to the pan. Mix everything well, cover with the lid, and let it simmer over low heat for 5 to 7 minutes, stirring occasionally so nothing sticks to the bottom.
  7. Step 4- Stir in the Rice and Lime
  8. Turn off the heat and add the cooked rice, lime juice, and cilantro if you're using it. Stir until fully combined, then season with salt and pepper to taste. This is your last shot to adjust the flavor before it gets wrapped up, so taste generously.
  9. Step 5- Soften the Tortillas
  10. Stack the tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave for 10 seconds. Flip the stack and microwave for another 10 seconds. Skipping this step is basically guaranteeing a cracked, torn tortilla, so don't skip it.
  11. Step 6- Roll the Burritos
  12. Lay out a tortilla and add 1 cup of filling near one edge. Fold that edge over the filling, tuck in the sides, and roll it up tightly into a burrito. Repeat with the remaining tortillas until you've got 6 ready to go.
