Method
 

  1. Step 1 - Prep and Sauté the Vegetables

  4. Add the bell pepper, onion, and baby spinach to the skillet. Cook for 2–3 minutes until the spinach wilts and the vegetables soften. Remove from heat and let cool slightly while you prepare the tofu base.
  5. Step 2 - Blend the Omelet Base
  6. In a blender or using an immersion blender, combine the silken tofu, nutritional yeast, chickpea flour, cornstarch, turmeric, garlic powder, salt, black pepper, vegan milk, and baking powder. Blend until completely smooth and creamy no lumps of tofu or chickpea flour remaining.
  7. Step 3 - Combine and Bake
  8. Add the sautéed vegetables to the tofu mixture and stir gently to combine you want the vegetables distributed evenly throughout without overmixing. Pour the combined mixture onto your prepared baking sheet and spread it into an even layer using a spatula.
  9. Bake for 35–40 minutes, until the top is golden and firm to the touch. Test by gently pressing the center it should spring back slightly rather than feeling wet or jiggly. Allow the baked omelet to rest for 5–10 minutes before slicing into 10 even squares. The resting time lets the structure firm up so the squares hold together cleanly when you cut them.
  10. Step 4 - Cook the Sausage Patties
  11. While the omelet bakes (or while it cools, depending on your timing), cook the vegan sausage patties in your second skillet according to package instructions, until golden and cooked through on both sides.
  12. Step 5 - Assemble the Sandwiches
