Peach season is short, fleeting, and honestly a little emotional when it ends. So when fresh peaches are actually in season and sitting on your counter smelling like the best version of summer — you should absolutely be eating them for breakfast.

Ingredients
  

  • ½ cup old-fashioned rolled oats
  • ½ cup plant-based milk almond, soy, oat — all work great
  • 2 tablespoons plant-based yoghurt cashew, soy, or coconut yoghurt
  • 1 teaspoon ground flaxseed or chia seeds
  • 2 teaspoons maple syrup or agave, date syrup, coconut sugar — whatever you prefer
  • 1 fresh peach pitted and diced

Equipment

  • A glass jar (pint-sized) or a bowl with a lid — a mason jar is the classic choice and works perfectly. The jar format is practical, portable, and keeps the oats fresh.
  • Measuring cups — for the oats and milk
  • Measuring spoons — for the yoghurt, flaxseed, and maple syrup
  • A spoon or small spatula for stirring
  • A knife and chopping board for dicing the peach
  • Your fridge — the unsung hero of this entire recipe

Method
 

  1. Step 1: Add all ingredients — the rolled oats, plant milk, plant-based yoghurt, ground flaxseed, and maple syrup — into a glass jar, bowl, or container that holds at least 12 ounces (up to 16 ounces is ideal). This gives the oats room to expand and leaves space for toppings later. Stir everything together well.
  2. Step 2: Add your diced fresh peach now, or keep it separate and mix it in just before eating. Both approaches work — adding it now means the peach flavour absorbs into the oats overnight, which is lovely. Adding it fresh in the morning means the peach stays firmer and more distinct.
  3. Step 3: Put a lid or cover on the container and place it in the fridge for at least 2 hours, or overnight.
  4. Step 4: In the morning, eat it cold straight from the jar — or microwave it for 30–60 seconds if you prefer a warm version. Add any extra toppings you like and enjoy.
