Step 1 - Preheat and Prepare the Dish
Preheat the oven to 350°F (175°C). Place your brie baker, oven-safe dish, or small skillet in the center of the oven while it preheats or prepare a parchment-lined baking sheet.
Step 2 - Prepare the Vegan Brie
Remove the vegan brie from its packaging and place it in your prepared dish or on the parchment sheet. If using Miyoko's or a rind-style vegan brie, keep the rind intact it holds the wheel together during baking, exactly as it does with dairy brie.
Using a sharp knife, score the top of the brie in a crisscross pattern make 3-4 parallel lines in one direction, then 3-4 more perpendicular lines. Cut just through the outer surface, approximately ¼ inch deep.
Step 3 - Add the Olive Oil
Drizzle the 1 tablespoon of extra virgin olive oil over the scored surface. Use your finger or a pastry brush to distribute it slightly if needed it should coat the scored top surface and allow the toppings to adhere.
Why olive oil specifically- Olive oil adds richness and helps the toppings adhere during baking. It also contributes a slight fruity, savory note that complements both the sweet honey and the nutty pecans.
Step 4 - Add the Toppings
Sprinkle the pomegranate arils evenly across the scored surface distribute them to cover the top without overcrowding. The pomegranate provides bursts of juice and bright color throughout the topping.
Add the chopped pecans over and between the pomegranate arils. Coarsely chopped (rather than finely ground) pecans provide better visual texture and a more satisfying crunch in the finished dish.
Drizzle the vegan hot honey (or maple syrup) over the entire topping let it fall naturally across the pomegranate and pecans rather than concentrating in one area.
Sprinkle the finely chopped fresh rosemary over the top if using. The rosemary is listed as optional, but it adds an herbal, slightly piney note that specifically bridges the sweet toppings and the savory cheese.
Step 5 - Bake
Place the prepared brie in the preheated oven and bake for 12-15 minutes.
The timing is critical- The recipe specifically notes to remove the brie just before you think it's done. Vegan brie, like dairy brie, softens from the inside outward by the time the exterior looks done, the interior is often past peak. Check at 12 minutes by pressing very gently on the top it should feel clearly soft and yielding.
Visual doneness indicators:
The rind (if present) looks slightly relaxed and the cheese appears to have softened
The honey bubbles gently at the edges
The pecans look lightly toasted not darkened
The pomegranate arils look slightly glossy and warmed
Step 6 - Rest and Serve
Remove from the oven and allow to rest for 1-2 minutes before serving. This brief rest allows the internal temperature to stabilize freshly-from-oven brie can be surprisingly hot and lose its shape if scooped immediately.
Serve in the baking dish with crackers, baguette slices, and/or sliced fruit arranged around it for scooping.
