Mini Caprese Skewers with Vegan Mozzarella and Basil Oil

Mini Caprese Skewers with Vegan Mozzarella and Basil Oil

There's a particular type of cookout appetizer that makes people stop their conversation mid-sentence to reach for one and Mini Caprese Skewers with Vegan Mozzarella and Basil Oil are exactly that. A cherry tomato, a folded basil leaf, a marinated vegan mozzarella ball, another basil leaf, another cherry tomato, all threaded onto a small skewer and finished with a drizzle of balsamic reduction. Fifteen minutes of assembly. Zero cooking. And a result that looks like something from a catered Italian dinner.

Ingredients

  • Simple ingredients all plant-based, every one carefully chosen:
  • For the Skewers:
  • 6 oz vegan mozzarella balls bocconcini-style-about 20 one-inch pieces the key ingredient in the vegan adaptation. Vegan mozzarella has improved dramatically in recent years. Violife Mozzarella melts well and has a mild, creamy flavor that works perfectly in this cold application. Miyoko's Fresh Vegan Mozzarella is arguably the most convincing bocconcini substitute it has a genuinely soft, slightly stretchy texture and a neutral dairy-like flavor that holds up beautifully on a skewer. Kite Hill makes a good option too. If your vegan mozzarella comes as a large ball or block, cut it into roughly 1-inch pieces before marinating.
  • 2 pints cherry tomatoes about 40 pieces - choose ripe, firm cherry tomatoes with vibrant color. Soft or overripe tomatoes won't hold their shape on the skewer and release too much juice onto the platter. A mix of red and yellow cherry tomatoes adds visual interest and makes the finished platter look more vibrant.
  • 1 cup fresh basil leaves about 40 leaves - fresh, not dried. The basil is a structural and flavor element in this recipe, not just a garnish. Choose large, flat basil leaves that fold cleanly. Tiny or very curly leaves are harder to thread; medium-to-large flat leaves fold neatly around the skewer without tearing. FYI basil bruises and darkens quickly once handled. Thread it quickly and serve the skewers within an hour of assembly for the most vibrant, green presentation.
  • 20 cocktail picks or 6-inch wooden skewers
  • For the Mozzarella Marinade:
  • 2 tablespoons extra-virgin olive oil - the base of the marinade that coats the vegan mozzarella and carries the Italian seasoning into every piece.
  • ½ teaspoon Italian seasoning - the blend of dried oregano basil, thyme, and rosemary that gives the mozzarella a subtle herb character. This step is what separates marinated mozzarella from plain mozzarella on a skewer; don't skip it.
  • For Finishing:
  • 2 tablespoons balsamic reduction - the finishing drizzle that ties the whole skewer together. Store-bought balsamic reduction also called balsamic glaze is available at most grocery stores near the vinegar and is completely acceptable to use. If you prefer to make your own, simmer ½ cup of balsamic vinegar in a small saucepan over medium-low heat for 10–15 minutes until reduced by half and thick enough to coat a spoon. Let it cool before drizzling it thickens further as it cools.

Equipment

  • The most minimal setup of any recipe in the cookout side dish category:
  • 20 cocktail picks or 6-inch wooden skewers - the structure that holds everything together. Cocktail picks (short, often decorative) are ideal for one-bite appetizers; 6-inch wooden skewers work well too and give guests a longer handle to hold. Avoid toothpicks they're too short and too flimsy for a tomato-plus-mozzarella combination that has some weight to it.
  • Medium mixing bowl - for tossing the vegan mozzarella balls with olive oil and Italian seasoning before threading. The marinade step is what elevates the mozzarella from plain to genuinely flavorful, so a bowl big enough to toss properly matters.
  • Serving platter - wide and flat so the assembled skewers can be laid out in a single, visible layer. These look beautiful arranged in neat rows with the balsamic reduction drizzled across in thin lines.
  • Small bowl - for the balsamic reduction if you're making it from scratch, or for pouring the reduction from a bottle into a drizzleable container.
  • Spoon or squeeze bottle - for drizzling the balsamic reduction over the assembled skewers in thin, elegant lines. A squeeze bottle gives you the most control and produces the most visually precise result; a regular spoon works perfectly fine.
  • Sharp knife and cutting board - if any of your cherry tomatoes need halving or your vegan mozzarella comes in a large block that needs cutting into 1-inch pieces.

Method

  1. Stage 1 - Marinate the Vegan Mozzarella
  2. Transfer the vegan mozzarella balls to your medium mixing bowl. Add the olive oil and Italian seasoning. Toss gently but thoroughly until every piece is evenly coated in the herbed oil. Let the mozzarella sit in the marinade for at least 5 minutes even this short rest allows the herbs to infuse into the surface of the cheese. If you have 30 minutes, the flavor improves noticeably. If you have time to marinate for a few hours in the fridge, even better.
  3. Stage 2 - Thread the Skewers
  4. Here's the threading order for each skewer follow this sequence for all 20:
  5. One cherry tomato - push it about ¾ of the way up the skewer to anchor everything
  6. One basil leaf, folded in half - fold it so the fold faces forward and thread it through the fold; this keeps it neat and prevents the leaf from spinning on the skewer
  7. One marinated vegan mozzarella ball - the center element
  8. Another basil leaf, folded - mirrors the first
  9. Another cherry tomato - anchors the top end
  10. Press the ingredients gently together on the skewer so they're snug without crushing the tomatoes. The finished skewer should look layered and intentional tomato, green, white, green, tomato with the colors alternating cleanly.
  11. Repeat for all 20 skewers and arrange on your serving platter as you go. Lay them in parallel rows with the skewer ends all pointing the same direction for a clean, organized presentation.
  12. Stage 3 - Finish and Serve
  13. Season the assembled skewers lightly with salt and pepper just a small pinch across the whole platter. Then drizzle the balsamic reduction over the skewers in thin, even lines across the whole platter. Don't pool it in one place thin parallel lines across the length of the platter look intentional and elegant. Serve immediately for the freshest basil and crispest tomatoes.
