Step 1: Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper or a silicone baking liner.
Step 2: Purée the banana in a food processor or blender until smooth and liquid. Set aside.
Step 3: In a large bowl, combine the oats, chopped macadamia nuts, shredded coconut, hemp hearts, chopped dates, nutmeg, and sea salt. Stir to combine.
Step 4: Pour the puréed banana and vanilla over the dry mixture and fold everything together with a spatula until every oat and nut is thoroughly coated. The mixture will be slightly sticky from the banana — that's exactly right.
Step 5: Spread the mixture as evenly as possible across the prepared baking sheet in a single layer. Pack it slightly rather than spreading it too loosely — packed granola creates better clusters.
Step 6: Bake for 30 minutes, stirring the granola at the halfway point (15 minutes) to ensure even toasting. The granola is ready when it's a deep golden colour and smells toasty and fragrant. Add 3–5 more minutes if it needs more colour.
Step 7: Remove from the oven and immediately toss the warm granola with the dried pineapple pieces and dragon fruit powder. The warmth helps the dragon fruit powder coat everything evenly, turning the granola a gorgeous shade of dusty rose-pink.
Step 8: Let the granola cool completely on the baking sheet before storing. It crisps up significantly as it cools — don't judge the texture while it's still warm. Store in a sealed jar at room temperature for up to one week.
How to Assemble the Parfait
The beauty of this recipe is that once the granola is made, the parfait takes two minutes to put together:
Step 1: Spoon a layer of thick plant-based yoghurt into the bottom of a glass or jar.
Step 2: Add a layer of fresh tropical fruit — mango chunks, sliced kiwi, pineapple pieces, whatever you're working with.
Step 3: Sprinkle a generous layer of tropical granola on top.
Step 4: Repeat the layers — yoghurt, fruit, granola — and garnish the top with a few extra pieces of fruit, a sprinkle of granola, and a mint leaf if you have one.
That's it. The granola does the complex work; the parfait assembly is effortless.
