Green smoothie bowls have a bit of a reputation problem. Too many of them taste like someone blended a lawn and poured it into a bowl with some granola on top and called it breakfast. This Refreshing Vegan Kiwi Lime Smoothie Bowl is nothing like that. It's vibrant, genuinely delicious, and the green comes from kiwi fruit — sweet, tangy, tropical kiwi — not a fistful of protein powder and sad spinach.

Ingredients
  

  • For the smoothie bowl base:
  • 2 kiwis peeled
  • 1 cup unsweetened coconut yoghurt
  • 2 dates pitted
  • 1 banana
  • 2 tbsp coconut flakes
  • 2 tbsp fresh mint leaves
  • ¼ tsp vanilla extract
  • ½ cup coconut milk
  • ½ cup ice
  • For the toppings:
  • Coconut flakes
  • Granola of your choice
  • Fresh kiwi slices
  • Fresh mint leaves

Equipment

  • A high-powered blender — this is the essential piece of kit. You need enough power to fully blend the dates (which are sticky and fibrous), the ice, and the coconut yoghurt into a completely smooth, creamy base. A Vitamix, NutriBullet Pro, or Ninja all handle this brilliantly. A weaker blender can struggle with the dates and ice combination — if yours is on the modest side, soak the dates in warm water for 10 minutes first to soften them.
  • Two wide, shallow serving bowls — wide and shallow means maximum surface area for toppings, which is both practical and visually important. Deep bowls make toppings harder to arrange and the whole bowl less appealing to eat.
  • A spatula for scraping every last drop of that green base out of the blender
  • A sharp knife for slicing fresh kiwi for the topping and peeling the blending kiwis
  • Measuring cups and spoons for accuracy
  • The blender is the only thing that makes or breaks this recipe. Everything else is straightforward.

Method
 

  1. Step 1: Add all smoothie bowl ingredients to your blender — the kiwis, coconut yoghurt, dates, banana, coconut flakes, mint leaves, vanilla, coconut milk, and ice. Blend on high speed until completely smooth and creamy.
  2. Step 2: Pour the blended base into two wide, shallow bowls, dividing it evenly between them.
  3. Step 3: Arrange your toppings — coconut flakes, granola, fresh kiwi slices, and mint leaves — over both bowls. Serve immediately.
  4. Three steps, five minutes, and you have two bowls of something that looks like it required considerably more effort than it did. That's the kind of recipe I'll always make room for.
