Combine all ingredients in the slow cooker and give everything a brief stir to combine.
Cover and cook on low for 8 hours or high for 4 hours, until the lentils are tender and mostly dissolved into the broth.
Turn off the heat. Add more vegetable stock or coconut milk to reach your preferred consistency the lentils will have thickened things up considerably.
Taste and adjust seasonings. Serve scooped into bowls with rice or naan, topped with chopped cilantro, a squeeze of lime, and a dollop of vegan yogurt if desired.
The Ingredients — And Why Each One Actually Matters
Red Lentils: Non-Negotiable
I cannot stress this enough you must use red lentils for this dish. Not green, not black, not brown. Red lentils are the fastest-cooking variety and they dissolve into the liquid as they cook, which is exactly what gives this curry its thick, creamy, almost porridge-like consistency. Swap them out and you'll end up with completely different textures and wrong cook times. IMO, red lentils are one of the most underrated pantry staples out there.
Full-Fat Canned Coconut Milk
Please don't reach for the lite version. This recipe was specifically tested with full-fat canned coconut milk, and that fat content is what creates the richness that makes this curry so satisfying. Boxed coconut milk or the lite version will leave you with something thinner and less indulgent and after 8 hours of waiting, you deserve indulgent.
Fresh Ginger and Garlic
Yes, you could use the jarred stuff in a pinch. But fresh ginger and garlic genuinely transform this dish. Grating them on a microplane releases more flavor than mincing and they dissolve right into the curry. This is one of those small upgrades that makes a big, noticeable difference.
