Slow Cooker Vegan Lentil Taco Soup takes bold Tex-Mex flavors, two kinds of beans, red lentils, corn, salsa verde, and a perfect spice blend and slow-cooks them into a thick, hearty, completely plant-based soup that earns its spot in the regular rotation immediately. Ingredients
  

  • A Tex-Mex pantry lineup that produces genuinely bold results:
  • The Aromatics and Vegetables:
  • 1 cup diced onion
  • 1 teaspoon avocado oil or olive oil
  • 1 bell pepper diced
  • 1 jalapeño pepper diced
  • The Liquid Base:
  • 2.5 cups vegetable broth
  • 1 can 15 oz tomato sauce or crushed tomatoes
  • ½ cup mild or medium salsa verde
  • 1 tablespoon tomato paste

  • Salt and pepper to taste added after cooking

Equipment

  • This recipe offers three cooking methods with different equipment requirements:
  • Slow Cooker Method
  • Large slow cooker (6-quart) - the primary equipment for the slow cooker version. Six quarts handles two cans of beans, the lentils, the corn, all the liquid, and the aromatics comfortably without overflow risk. The lentils expand during cooking adequate headspace prevents overflow.
  • Instant Pot Method (Fastest)
  • 6-quart Instant Pot - set to high pressure for 15 minutes. The total time including pressurization and natural pressure release runs approximately 43 minutes. This is the fastest option when you haven't planned ahead.
  • Stovetop Method
  • Large heavy-bottomed pot or Dutch oven - for the stovetop version that takes approximately 35–40 minutes total.
  • Supporting Equipment (All Methods)
  • Sharp knife and cutting board - for dicing the onion, bell pepper, and jalapeño
  • Can opener - for the black beans, pinto beans, tomato sauce, and tomato paste
  • Colander - for draining and rinsing the beans
  • Measuring cups and spoons
  • Wooden spoon or silicone spatula - for stirring before cooking and adding the cream at the end

  • The 10-minute prep time genuinely covers everything the dicing, measuring, and can opening all happen before anything goes into the slow cooker. Efficient prep makes this recipe as close to dump-and-go as a recipe with fresh vegetables can be.

Method
 

  1. Slow Cooker Method
  2. Step 1 - Prep everything first. Dice the onion, bell pepper, and jalapeño. Drain and rinse both cans of beans in a colander. Measure out the red lentils, corn, broth, spices, and all liquid ingredients. Having everything measured and ready before you start makes the actual loading of the slow cooker a 3-minute task.
  3. Step 2 - Add everything to the slow cooker except cream and toppings. Add the diced onion, bell pepper, jalapeño, oil, corn, lentils, black beans, pinto beans, vegetable broth, tomato sauce, tomato paste, salsa verde, chili powder, garlic powder, cumin, and cayenne pepper directly to the slow cooker. Stir everything together to distribute the spices evenly through the liquid.
  4. Do not add salt and pepper yet. The sodium content of the finished soup depends on the specific brands of broth, tomatoes, and beans you use these vary significantly. Seasoning at the end with full tasting control prevents over-salting.
  5. Step 3 - Cook. Cover and cook on HIGH for 4–6 hours or LOW for 7–8 hours until the lentils have cooked through completely and the vegetables are tender. The soup is ready when the red lentils have largely dissolved into the broth, creating a thick, rich consistency throughout.
  6. Step 4 - Add the optional cream and season. If using a vegan cream option, stir it in now. Taste and season with salt and pepper. Give the soup a final stir and adjust any seasoning more salsa verde for tanginess, more cayenne for heat, more cumin for depth.
  7. Step 5- Top generously and serve. Ladle into bowls and pile on toppings immediately before serving.
