Step 1 - Prep the Ingredients
The 10-minute prep covers:
Peel and chop the butternut squash into bite-sized pieces approximately ¾-inch cubes that will cook through evenly in 3–4 hours on HIGH
Chop the onion into ½-inch pieces
Mince the garlic finely
Chop the red bell pepper
Grate the fresh ginger finely with a microplane
Drain and rinse the chickpeas
Step 2 - Load the Slow Cooker
Add every ingredient directly to the slow cooker the chopped onion, minced garlic, butternut squash pieces, chopped bell pepper, dried red lentils, drained chickpeas, tomato sauce, grated ginger, turmeric, cumin, smoked paprika, cinnamon, salt and pepper, and vegetable broth.
Stir everything together well. This initial stir is important you want the spices to distribute evenly through the broth rather than sitting concentrated in one area. The tomato sauce and broth together should cover or nearly cover all the vegetables and legumes.
Step 3 - Cook
Cover the slow cooker and cook on HIGH for 3–4 hours or LOW for 6–7 hours.
Optional thickening step: Remove the cover during the final hour of cooking. The open slow cooker allows steam to escape, which reduces the liquid volume and concentrates the stew into a thicker, more coating consistency. This produces a noticeably heartier result — closer to a thick tagine consistency than a brothy stew.
The red lentils will dissolve almost completely during the cook, naturally thickening the broth. The butternut squash will become completely tender and its edges will have partially melted into the sauce, deepening the stew's orange color and sweet character.
Step 4 - Taste and Season
When the cook time ends, taste the stew and adjust seasoning. The spices mellow slightly during the long cook you may want to add a pinch more cumin or smoked paprika at the end to restore brightness. Add salt gradually and taste between additions.
Step 5 - Serve the Moroccan Way
Ladle the stew over cooked quinoa in each bowl. Add a handful of fresh arugula alongside the peppery, slightly bitter arugula cuts beautifully through the sweet warmth of the stew and adds a fresh contrast that makes the whole bowl more interesting. Finish each bowl with a generous dollop of vegan coconut yogurt, which adds cooling, tangy creaminess against the warm, spiced stew.
