If that's you, heat 2 tablespoons of avocado oil in a large skillet over medium-high heat after the slow cook, add the shredded jackfruit, and cook for 15–20 minutes until the edges develop a slightly caramelized, slightly crispy character. This optional step produces a texture that more closely resembles slow-smoked pulled pork genuinely worth the extra effort if texture is important to you.

  1. Step-by-Step Instructions
  2. Step 1 — Prep and Spice the Jackfruit
  3. Drain both cans of jackfruit in a colander and rinse thoroughly under cool running water. Pat dry with paper towels — removing excess moisture helps the spice rub adhere properly and prevents the slow cooker from becoming too watery during cooking.
  4. Transfer the drained jackfruit to a large mixing bowl. Add the entire spice blend brown sugar, Mexican oregano, cumin, garlic powder, salt, black pepper, smoked paprika, and chili powder over the jackfruit. Stir well until every piece gets evenly coated. Take a moment here to really work the spices into all the crevices and pieces of jackfruit thorough coating at this stage means the finished pulled jackfruit tastes seasoned throughout rather than just on the surface.
  5. Transfer the spice-coated jackfruit to the slow cooker.
  6. Step 2 — Add the Remaining Ingredients

  9. Step 3 — Slow Cook for Five Hours
  10. Cover the slow cooker and cook on LOW for 5 hours. Don't lift the lid during this period every peek releases steam and extends the cooking time. Trust the process.
  11. After 5 hours, the jackfruit should be completely tender and the peaches should have broken down almost entirely into the sauce. The sauce itself should be thick, dark, and deeply fragrant. The kitchen should smell like the best summer cookout you've ever attended.
  12. Step 4 — Shred and Taste
  13. Using two forks, shred the jackfruit directly in the slow cooker. Work through the larger pieces, pulling them apart into strands that resemble pulled pork. The jackfruit should shred very easily at this stage it should offer almost no resistance. Any pieces that don't shred easily can be broken up with the back of a fork.

  19. If you prefer a slightly crisper texture, heat 2 tablespoons of avocado oil in a large deep-sided skillet over medium-high heat. Add the shredded jackfruit and cook for 15–20 minutes, stirring occasionally, until the edges caramelize and some pieces develop a slightly crispy exterior. This produces a texture contrast crispy edges, tender centers that genuinely elevates the eating experience.
