A wok is ideal because its sloped sides and concentrated heat handle quick stir-fry-style cooking best, but a wide skillet works excellently.
  • Small pot for cooking the rice simultaneously with the sauce and tofu. The rice takes approximately the same time as the complete sauce-and-tofu preparation, so starting them simultaneously produces perfect timing where everything finishes together.
  • Tofu Pressing Equipment
  • Dedicated tofu press - the most convenient option if you cook with tofu regularly. Produces the most thoroughly pressed tofu in 20 minutes or less.

Method
 

  1. Step 1 - Start the Rice
  2. Combine the 1 cup of white rice and 2 cups of water in a small pot. Bring to a boil over high heat, stir once, then reduce to the lowest possible heat and cover. Cook for 15–18 minutes until the water fully absorbs. Remove from heat and let steam covered for 5 minutes before serving.
  3. Starting the rice first ensures it finishes approximately when the tofu does perfect timing without any coordination required.
  4. Step 2 - Press the Tofu
  5. While the rice cooks, press the tofu if you haven't already. Drain the package, wrap the tofu block in paper towels, and press between two plates with something heavy on top for 10 minutes minimum. After pressing, crumble the tofu into irregular pieces some large chunks, some smaller crumbles. The irregular sizing creates textural variety in the finished bowl that uniform cubes don't produce.
  6. Step 3 - Sauté the Aromatics
  7. Heat the 1 tablespoon of sesame oil in your large skillet over medium heat. Add the whites of the green onions, the diced sweet peppers, and the white pepper. Cook for 2–3 minutes, stirring frequently, until the peppers soften slightly and the green onion whites become translucent.

  9. Step 4 - Build the Peanut Sauce

  13. Add the crumbled tofu to the pan with the sauce. Toss gently but thoroughly using a wooden spoon, breaking larger pieces into the sauce and coating every piece evenly.   15. Step 6 - Plate and Garnish
  16. Divide the cooked rice between four bowls. Spoon the spicy peanut tofu generously over each portion. Top each bowl with the reserved green onion greens, sliced Thai chilies (to taste start with one chili per bowl and adjust), and fresh lime wedges for squeezing.
