Taco night just called and it wants to go fully plant-based. Before you roll your eyes and picture a sad bowl of limp lettuce, hear me out. This slow cooker vegan walnut taco meat bowl is smoky, savory, satisfying, and honestly gives traditional taco meat a serious run for its money.

  • 1 small onion chopped
  • 4 cloves garlic minced
  • 2 cups shredded carrots
  • ½ cup bell peppers or other finely chopped vegetables optional
  • 3 oz tomato paste
  • 2 tbsp vegan Worcestershire sauce or more to taste
  • 3 tsp soy sauce use coconut aminos for soy-free
  • 1 tsp apple cider vinegar
  • ½ tsp molasses
  • ½ tsp or more salt
  • 2 tsp smoked paprika
  • ½ tsp chipotle pepper powder less for less heat
  • ¼ tsp black pepper
  • ½ tsp ground cumin
  • ½ tsp dried oregano
  • ¼ tsp ancho chili powder or cayenne optional
  • A generous pinch of cloves or allspice
  • Juice of 1 lime about 2–3 tbsp
  • ¼ tsp or more sugar
  • ¾ cup walnuts

  • Pico de gallo or salsa of choice
  • Avocado cubed
  • Salt pepper, and lime juice to dress

Equipment

  • Nothing fancy here. Just the basics:
  • Food processor (makes prep incredibly fast highly recommended)
  • Large saucepan or skillet (a wide, heavy-bottomed pan works best)
  • Grater (if you skip the food processor for the carrots)
  • Knife and cutting board
  • Measuring spoons
  • Skillet or grill pan (for charring the bowl peppers)
  • Serving bowls make them big, because you'll want generous portions
  • The food processor is the one tool that truly earns its keep here. It processes the onion, garlic, carrots, peppers, and walnuts in minutes and saves you a solid chunk of prep time. If you don't own one, a box grater and a knife work fine just budget a few extra minutes.

  2. Prep everything first. Chop the onion and garlic in a food processor or by hand. Process the carrots and bell peppers until shredded, or grate the carrots and chop the peppers manually. Process the walnuts separately until roughly crumbled not a paste. Set everything aside.
  3. Build the flavor base. Heat oil in a large saucepan or skillet over medium heat. Add the onion, garlic, and a pinch of salt. Cook for 3–4 minutes until softened and fragrant.
  4. Add the vegetables. Toss in the carrots and bell peppers with another good pinch of salt. Cook for 5 minutes, stirring occasionally, until they start to soften.
  5. Add the sauce and spices. Add the tomato paste, Worcestershire sauce, soy sauce, apple cider vinegar, molasses, lime juice, and all the spices. Mix everything together thoroughly and cook for 3–4 minutes.
  6. Add the walnuts. Stir them in and mix well. Taste and adjust more smoked paprika for smokiness, more lime for tang, more salt if needed. Check that the carrots are mostly cooked through.
  7. Finish and rest. Cook for another 2 minutes, then let the mixture sit for a few minutes before serving. This resting time lets the flavors settle and deepen.
  8. Char the peppers. While the taco filling rests, grill the bowl peppers or cook them in a skillet over medium-high heat with a teaspoon of oil until golden brown and slightly charred on the edges.
  9. Assemble the bowls. Layer chopped greens, roasted bell pepper, pico de gallo, a generous scoop of the walnut taco mix, and cubed avocado. Sprinkle with salt, pepper, and a squeeze of lime. Add any additional toppings you like.
