Ingredients

  • Ingredients Breakdown
  • This recipe keeps things bold letting roasted jalapeño, lime, and basil do the flavor work. Here's exactly what you need.
  • 2 3 to 4-inch roasted jalapeño peppers, seeded (just shy of 1/2 cup once chopped)
  • 1/2 cup fresh lime juice from about 2 to 3 large limes
  • 1 1/2 tablespoons maple syrup
  • 1/4 cup fresh basil chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground oregano
  • 3/4 teaspoon kosher salt
  • A few turns freshly ground black pepper
  • 1/2 cup extra virgin olive oil
  • Leaving some seeds in the jalapeños gives you extra heat if you're into that. Removing them all keeps things milder while still getting that smoky roasted flavor.

Equipment

  • This recipe keeps the tool list short. Here's what to grab:
  • Blender
  • Baking sheet
  • Foil
  • Small knife (for seeding and peeling the peppers)
  • No stand mixer, no food processor required, just a blender and your oven's broiler.

Method

  1. Step 1- Roast the Peppers
  2. Turn on the broiler and line a baking sheet with foil. Wash and dry the jalapeños, slice them in half vertically, and remove the seeds with a teaspoon, leaving some in if you want extra heat.
  3. Step 2- Char the Peppers
  4. Place the peppers round-side up on the foil-lined sheet. Place under the broiler a few inches away and let them char, which should take less than a minute. Watch closely so they don't burn.
  5. Step 3- Cool and Peel
  6. Remove from the oven and let cool for a few minutes. Use the back of a knife or your fingers to peel off the charred skin, then roughly chop the peppers and add them to a blender.
  7. Step 4- Add the Remaining Ingredients
  8. Add the lime juice, maple syrup, fresh basil, cumin, oregano, salt, and pepper to the blender. Blend until smooth.
  9. Step 5- Add the Oil
  10. Add the olive oil and blend again for a few seconds until fully combined.
