Step 1 - Prep and Pit the Dates
Take each Medjool date and slice it in half lengthwise but don't cut all the way through. You want to open it like a book, not split it into two separate pieces. Peel the date open gently and pull out the center pit. Check for the small stem at the top and remove that too. Discard the pits and set the opened dates on a sheet of parchment paper.
Work gently here. Medjool dates are soft and they can tear if you're too aggressive. A sharp knife makes this much easier.
Step 2 - Stuff with Peanut Butter
Scoop about a teaspoon of natural peanut butter into the center of each opened date. You want enough to fill the cavity left by the pit without overflowing the sides though a little overflow into the chocolate later is hardly a tragedy. Press the peanut butter in lightly so it sits securely.
Step 3 - Melt the Chocolate
Place your vegan chocolate chips and coconut oil together in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each one, until the chocolate is completely smooth and glossy. This usually takes 60–90 seconds total. Don't rush it overheated chocolate seizes up and turns grainy, and there's no coming back from that
Prefer the stovetop method? Set a heatproof bowl over a pot of barely simmering water (make sure the bowl doesn't touch the water) and stir the chocolate constantly until smooth. Both methods work the microwave is just faster.
Step 4 - Dip the Dates
Here's the fun part. Hold each stuffed date with two forks and lower it into the melted chocolate. You have two options:
Full dip- Submerge the entire date for a complete chocolate coating maximum indulgence, slightly harder to execute without losing the peanut butter filling.
Half dip- Dip just the bottom half of the date into the chocolate and let the peanut butter filling stay visible on top. IMO, this is the better approach the visual contrast is gorgeous and the flavor balance between the naked date, the peanut butter, and the chocolate is perfect.
Let the excess chocolate drip off and set each dipped date back on the parchment paper.
Step 5- Sprinkle with Chopped Peanuts
Finely chop the peanuts and sprinkle them over the chocolate-coated dates while the chocolate is still wet. They'll adhere as the chocolate sets and add a satisfying crunch on top that the recipe genuinely needs for textural contrast.
Step 6 - Chill and Finish
Slide the parchment paper (with the dates on it) onto a plate or baking sheet and transfer to the fridge for about 1 hour. The chocolate needs time to fully set and the peanut butter firms up slightly, which makes every bite cleaner and more structured.
Once chilled, sprinkle with flaky sea salt right before serving. Don't add the salt before chilling it'll dissolve and you'll lose that satisfying crunch and visual pop on the surface.
