Creamy Vegan Tomato Basil Soup

The BEST Creamy Vegan Tomato Basil Soup

Hot take: tomato soup doesn't need cream, it doesn't need butter, and it definitely doesn't need to come from a can. This Creamy Vegan Tomato Basil Soup proves all of that in exactly 35 minutes. It's rich, silky, loaded with fresh heirloom tomatoes and basil, and gets its creaminess from silken tofu — which sounds unexpected but works so well you'll forget you ever made it any other way.

Ingredients

  • For the Soup:
  • 3 Tbsp. extra-virgin olive oil for cooking
  • ¼ cup extra-virgin olive oil streamed in at the end — this is the magic step
  • 2 cups finely chopped yellow onion
  • 4 oz. ~½ cup tomato paste
  • 4 garlic cloves minced
  • ½ tsp. fennel seeds
  • ¼ to ½ tsp. crushed red pepper flakes ¼ tsp. for mild, ½ tsp. for medium heat
  • 2 lbs. fresh heirloom tomatoes cut into 1-inch cubes
  • 1½ tsp. kosher salt
  • 1 16-oz. package silken tofu, drained
  • ½ cup fresh basil leaves
  • ½ cup water
  • Cracked black pepper to finish
  • For the Zesty Tomato-Corn Salsa:
  • 1 cup halved cherry tomatoes
  • ¾ cup fresh corn kernels from 1 cob — sub frozen/thawed or canned corn
  • ¼ cup chopped fresh basil leaves
  • 3 Tbsp. red wine vinegar
  • 2 Tbsp. extra-virgin olive oil
  • Pinch of kosher salt

Equipment

  • Large stock pot or Dutch oven — for cooking the soup base
  • High-powered blender — for getting that smooth, creamy finish (a Vitamix or Blendtec works beautifully; a regular blender works too, just blend in two batches and be careful with the hot liquid)
  • Sharp knife and chopping board
  • Medium bowl (for the salsa)
  • Ladle
  • Wooden spoon or spatula
  • Safety tip: Hot liquids expand when blended. Never fill your blender more than halfway, hold the lid down firmly with a folded kitchen towel, and start on low speed before cranking it up.

Method

  1. Heat 3 Tbsp. olive oil in your large stock pot or Dutch oven over medium-high heat. Once hot, add the chopped onions and cook for 6–7 minutes until soft and translucent.
  2. Stir in the tomato paste, minced garlic, fennel seeds, and red pepper flakes. Cook for 3 minutes, stirring occasionally, until the tomato paste turns brick-red and starts to caramelize at the edges. This step is where the flavor depth really happens — don't rush it.
  3. Add the cubed heirloom tomatoes and salt. Stir to combine and simmer for 8–10 minutes until the tomatoes start breaking down and releasing their juices. Your kitchen will smell incredible right now.
  4. Carefully transfer the tomato mixture to your blender. Add the silken tofu, ½ cup fresh basil leaves, and ½ cup water. Blend on HIGH for about 1 minute until completely smooth and creamy. With the blender still running, slowly stream in the remaining ¼ cup olive oil. This emulsifies the oil into the soup and gives it that gorgeous, velvety finish.
  5. Pour the blended soup back into the pot and reduce heat to low to keep warm.
  6. Make the Zesty Tomato-Corn Salsa: combine cherry tomatoes, corn kernels, and chopped basil in a medium bowl. Add the red wine vinegar, olive oil, and a pinch of salt. Stir and set aside.
  7. Ladle soup into 5 bowls. Spoon a generous amount of salsa on top of each, finish with a light drizzle of olive oil and cracked black pepper. Serve immediately.
