A large baking sheet with a rim — large enough to spread all the vegetables in a single even layer. Crowding the pan causes steaming rather than roasting, which produces soft, bland vegetables instead of golden, caramelised ones. If your baking sheet isn't big enough, use two.
Parchment paper — prevents sticking and makes cleanup almost effortless
A large mixing bowl or the baking sheet itself — for tossing the vegetables in oil and seasoning before roasting
A sharp knife and chopping board — for cubing the potatoes and slicing the pepper and onion
A skillet or frying pan — for making the sausage crumbles on the hob while the vegetables roast
Three serving bowls — deep enough to hold a generous portion of vegetables, sausage crumbles, and avocado
Measuring spoons for the herbs, salt, and spices
A spatula for tossing the vegetables mid-roast if desired
