Ultimate Heirloom Tomato & Avocado Toast with Balsamic Glaze

Ultimate Heirloom Tomato & Avocado Toast with Balsamic Glaze

Some breakfasts need a whole recipe box. This one needs a knife and five minutes. If heirloom tomatoes are showing up at your market looking like edible works of art right now, this Ultimate Heirloom Tomato & Avocado Toast with Balsamic Glaze is exactly how you should be eating them. I make this practically every morning during peak tomato season, and I still haven't gotten tired of it.

Ingredients

  • Here's exactly what goes into this toast:
  • 1 small avocado or ½ a large one
  • 1 medium tomato or 7-10 cherry tomatoes if that's what you've got
  • 1-2 squeezes of fresh lemon juice
  • 1 pinch garlic powder
  • 2 slices sourdough bread or your favorite bread
  • 2-3 leaves fresh basil
  • A drizzle of extra virgin olive oil
  • A drizzle of balsamic glaze
  • 1 pinch kosher salt and black pepper to taste
  • Heirloom tomatoes are the star here so don't skimp on quality. A bland, mealy tomato will drag the whole dish down, no matter how good your avocado is. FYI, most grocery store balsamic glazes are naturally vegan, but it's worth double-checking the label if you're buying a flavored or specialty version.

Equipment

  • Nothing fancy required here — just the basics:
  • Kitchen knife - for slicing tomatoes and mashing avocado
  • Small mixing bowl - for the avocado mash
  • Toaster - for, well, toasting the bread
  • That's the whole list. No food processor, no blender, no specialty gadget you'll use once and forget about. Ever notice how the best recipes ask the least of you? This is one of them.

Method

  1. Step 1- Prep the avocado and tomato. Remove the skin and pit from the avocado, then slice your tomato. Mash the avocado in a small bowl until it reaches your preferred texture — chunky or smooth, whatever you're into. Add the lemon juice, salt, pepper, and garlic powder, then mix everything together.
  2. Step 2- Toast the bread. Toast your bread of choice until it's golden and sturdy enough to hold toppings without going soggy. Nobody wants a floppy toast situation.
  3. Step 3- Build the toast. Spread the avocado mixture evenly across each slice of toast. Layer the sliced tomatoes on top of the avocado, covering the surface as evenly as you can.
  4. Step 4- Finish it off. Rough chop the fresh basil and scatter it over the tomatoes. Drizzle olive oil and balsamic glaze on top, then finish with an extra squeeze of lemon and a little flaky sea salt and black pepper.
  5. Hint- If you want a deeper, sweeter tomato flavor, try roasting your tomatoes instead of using them raw. Slice them, lay them on a parchment-lined baking sheet, drizzle with olive oil, salt, and pepper, then bake at 400°F (200°C) for 20-25 minutes until softened and slightly caramelized.
