Vegan Breakfast Toast with Avocado and Radish Salsa

Vegan Breakfast Toast with Avocado and Radish Salsa

Most people think of radishes as that thing they push to the side of their plate at a salad bar. Those people are missing out. Thinly sliced radishes on top of creamy mashed avocado toast is one of those combinations that seems unexpected until you try it — and then it makes complete, obvious sense. The peppery crunch of fresh radish against rich, garlicky avocado is genuinely excellent, and the pop of bright red-and-white against the green is one of the most visually striking breakfasts you can make without any real effort.

Ingredients

  • 4 slices whole grain sandwich bread
  • 2 large avocados
  • 8 large radishes trimmed and thinly sliced
  • 2 cloves garlic pressed (optional but highly recommended)
  • ¼ teaspoon salt optional, adjust to taste
  • Pinch of red pepper flakes optional
  • 4 tablespoons nutritional yeast optional but genuinely worth adding

Equipment

  • A toaster — for four slices at once, ideally a four-slice toaster. Otherwise do two rounds.
  • A mixing bowl — for mashing and seasoning the avocado
  • A fork, cocktail muddler, or potato masher — the muddler is the unusual recommendation here. It gives you excellent control over texture, producing a rough mash with good chunky variation. A fork works perfectly well.
  • A garlic press — if you're using the garlic (please use the garlic). Pressing garlic directly into the avocado is faster and cleaner than mincing by hand, and the pressed garlic distributes more evenly through the mash.
  • A sharp knife — for halving the avocados and slicing the radishes. Thin radish slices require a genuinely sharp knife — a dull one will crush them rather than cut them cleanly.
  • A mandoline slicer — optional but excellent for the radishes if you have one. Paper-thin radish slices look spectacular and have a more delicate texture than thicker ones.
  • Measuring spoons for the salt and nutritional yeast
  • Nothing complicated, nothing specialised beyond a garlic press — and even that's optional

Method

  1. Step 1: Cut both avocados in half, remove the pits, and scoop the flesh into a bowl using a spoon.
  2. Step 2: Using a cocktail muddler, fork, or potato masher, mash the avocado until mostly smooth but still slightly chunky. You want texture, not a purée.
  3. Step 3: If using garlic, press both cloves through a garlic press directly into the mashed avocado. Stir to incorporate. Add the salt and taste — adjust as needed.
  4. Step 4: Trim the green tops off the radishes and slice them as thinly as you can. A sharp knife or a mandoline gives you the cleanest, most even slices.
  5. Step 5: Toast your bread until golden and crisp.
  6. Step 6: Divide the mashed avocado between all four slices of toast. Top generously with the sliced radishes. Sprinkle with red pepper flakes and nutritional yeast if using. Slice each piece in half and serve immediately.
  7. Five minutes, four servings, genuinely impressive result.
