Ingredients
  

  • ¼ cup cooked white beans drained & rinsed (canned works)
  • ⅓ cup plant-based ricotta or make whipped tofu: blend ¼ block tofu + 1 tsp lemon + pinch salt
  • ¼ cup fresh spinach finely chopped
  • 1 tsp lemon zest microplane it — it wakes up the whole flatbread
  • 1 tbsp fresh basil chopped (plus extra for garnish)
  • 1 tsp olive oil
  • 1 tsp garlic minced
  • Pinch salt & black pepper
  • 1 small whole-grain flatbread about 6–8 inches
  • ¼ cup marinated artichoke hearts chopped
  • Pinch chili flakes optional
  • 2 tsp balsamic glaze for drizzling

  • FYI: You don’t need a food processor — mashing by hand keeps a great texture.

Method
 

  1. Preheat & prep
  2. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup. Grab your bowl and measure ingredients.
  3. Whip the white-bean “ricotta”
  4. Add ¼ cup white beans to the mixing bowl and mash with a fork or potato masher until mostly smooth but slightly chunky. Add ⅓ cup plant-based ricotta, ¼ cup chopped spinach, 1 tsp lemon zest, 1 tbsp chopped basil, 1 tsp olive oil, 1 tsp minced garlic, and a pinch each of salt and pepper. Stir until well combined. Taste and tweak salt or lemon if you want more brightness.
  5. Crisp the flatbread
  6. Place the flatbread on the baking sheet and bake 2–3 minutes to firm it up. You want a slight crisp so the topping doesn’t make it soggy.
  7. Top & bake
  8. Spread the whipped ricotta mixture evenly over the slightly crisp flatbread. Scatter ¼ cup chopped artichoke hearts on top and sprinkle a pinch of chili flakes if you like heat. Slide the flatbread into the oven and bake 8–10 minutes until the edges crisp and the topping warms through.
  9. Finish & serve
  10. Remove from the oven and top with torn fresh basil, a quick grating of lemon zest, and a light drizzle of 2 tsp balsamic glaze. Slice and serve immediately.
  11. Quick question: Want it crispier? Pre-bake the flatbread a little longer before assembling — I do this when I crave extra crunch.
