- Prep the pasta and veggies
- Bring a large pot of salted water to a boil if you plan to cook pasta separately. Otherwise, have the pasta measured and the asparagus chopped and ready. Zest and juice the lemon so you don’t hunt for it mid-sauce.
- Blanch or steam asparagus quickly
- Heat 1 tsp olive oil in your skillet over medium heat. Add garlic and cook 20–30 seconds until fragrant. Add asparagus, a pinch of salt and pepper, cover, and steam 3 minutes until bright green and just tender. Transfer 2/3 of the asparagus to a bowl; leave the rest in the pan.
- Sauté aromatics for the sauce
- Add another teaspoon of oil to the same skillet. Sauté the onion and mushrooms (if using) for about 2 minutes until soft. Scrape the pan so those browned bits stay in the pan — they add flavor.
- Blend the lemon cream (quick and magical)
- In a blender combine tofu, non-dairy milk, lemon juice, lemon zest, onion powder, ground mustard, nutritional yeast, salt, flour, and Italian seasoning. Blend until very smooth. This creates a creamy, stable vegan “cream” without cashews or soaking.
- Thicken the sauce and bring to simmer
- Pour the blended sauce into the skillet with the aromatics, add the lemon slices and extra lemon zest, and bring to a gentle simmer for 3–5 minutes while stirring. Taste and adjust salt, pepper, or lemon if you want more brightness.
- Combine pasta and sauce
- If you cooked the pasta separately, add drained pasta to the skillet and toss with 2/3 of the asparagus and sauce. If you prefer a true one-pot flow: add pasta and just enough boiling water or broth to cover the pasta, stir, cover, and simmer per pasta package instructions, stirring occasionally, until al dente and most liquid absorbs into the sauce. Finish by stirring in reserved asparagus.
- Rest and garnish
- Turn off the heat, cover, and let the dish rest 2 minutes to let the sauce thicken and flavors meld. Garnish with red pepper flakes, cracked black pepper, fresh basil, optional vegan parm, and the remaining asparagus. Serve hot.
