Vegan Lemon-Garlic Scallion Noodle Bowl (Vegan)

Ingredients
  

  • 6 oz dry ramen noodles or Pad Thai rice noodles
  • 2 Tbsp neutral cooking oil divided
  • 3 –4 cups small broccoli florets or 8 oz shiitake mushrooms
  • 3 Tbsp vegan butter swap for plant butter or extra oil to keep vegan
  • 1 whole bunch green onions scallions, trimmed and thinly sliced, divided
  • 4 garlic cloves minced or thinly sliced
  • 2 tsp freshly grated ginger
  • 1/4 –3/4 tsp chili flakes adjust to taste
  • 1/4 cup lower-sodium soy sauce or tamari use low-sodium to avoid oversalting
  • 1/2 cup shelled edamame optional for extra protein
  • 2 Tbsp toasted sesame seeds or 1–2 tsp toasted sesame oil
  • Lemon zest or a splash of fresh lemon — optional extra brightener
  • Chili oil for garnish optional
  • Bold note: use vegan butter so the recipe stays 100% plant based.

Equipment

  • Large skillet (12-inch works great)
  • 4–6 qt pot for boiling noodles
  • Colander or strainer
  • Grater for ginger (or microplane)
  • Tongs for tossing noodles

  • No fancy gadgets required. FYI, a wok also works if you have one.

Method
 

  1. Cook the noodles
  2. Bring a pot of salted water to a boil and cook the noodles according to package directions (most need about 3–4 minutes). Drain and set aside. Toss them with a little oil if they might stick.
  3. Sauté the broccoli (or mushroom)
  4. Heat 1 Tbsp oil in a large skillet over medium-high heat. Add broccoli and sauté 5–6 minutes until crisp-tender. Transfer broccoli to a bowl and lower the heat.
  5. Build the lemon-garlic sauce
  6. Add vegan butter and the remaining 1 Tbsp oil to the skillet. Stir in two-thirds of the scallions, garlic, ginger, and chili flakes. Sauté ~3 minutes until fragrant. Pour in the soy sauce and let the mixture bubble for a moment.
  7. Finish the bowl
  8. Add the cooked noodles, broccoli, edamame, and toasted sesame seeds. Use tongs to toss everything well so the noodles coat in the lemon-garlic scallion sauce. Taste and add a squeeze of lemon or more soy if you want extra zip.
  9. Serve & garnish
  10. Divide the noodles between bowls. Sprinkle with the remaining scallions, extra sesame seeds, and a drizzle of chili oil if you like heat. Serve immediately.
