A great pasta salad is the cookout side dish that solves three problems simultaneously: it feeds a crowd, it works at room temperature or chilled, and it tastes better the longer it sits. Vegan Pasta Salad for a Cookout delivers all three rotini or bow ties tossed with chickpeas, black olives, bell peppers, cherry tomatoes, red onion, and a bright lemon-herb vinaigrette that coats every piece of pasta and vegetable with genuinely good flavor. It serves 4-6 people at 438 calories per serving, takes 15 minutes of actual work, and is the kind of cookout side dish that gets requested again at the next gathering.

Ingredients

  • The Pasta and Main Components:
  • 16 oz pasta - rotini penne, bow ties, or elbow macaroni
  • 1 can 15 oz chickpeas - drained and rinsed
  • 1 can 6 oz sliced black olives - drained
  • 1 bell pepper any color - diced
  • 1 small red onion - sliced
  • 8 oz grape or cherry tomatoes ~1½ cups - halved
  • ½ large cucumber -sliced and quartered optional
  • ¼ to ½ cup fresh parsley - chopped
  • The Vinaigrette:
  • 3-4 tablespoons extra virgin olive oil
  • ¼ cup apple cider vinegar white or red wine vinegar also works
  • 1 teaspoon dried oregano Italian seasoning or Herbs de Provence work too
  • ½ teaspoon garlic powder
  • Generous pinch red pepper flakes
  • Generous pinch mineral salt and fresh cracked pepper
  • Juice of 1 lemon optional but recommended

Equipment

  • For Cooking the Pasta
  • Large pot - minimum 6-quart capacity for 16 oz of pasta, allowing adequate water volume for even cooking
  • Colander - for draining
  • Access to cold running water - for rinsing the drained pasta immediately
  • For assembly:
  • Very large mixing bowl - 16 oz of cooked pasta plus all the vegetables and dressing requires significant volume. Use a bowl that feels too big you need room to toss without spilling.
  • Sharp knife and cutting board - for dicing the bell pepper, slicing the red onion and tomatoes, and chopping the parsley
  • Small bowl or jar with lid - for whisking or shaking the vinaigrette before adding to the pasta
  • Whisk or fork - for combining the dressing
  • Large spoon or tongs - for tossing the salad

Method

  1. Step 1 - Cook the Pasta to Al Dente
  2. Cook the pasta according to package directions, but pull it 1-2 minutes before the package's suggested time. Al dente pasta tender with a slight firmness at the center holds its texture after dressing and chilling far better than fully cooked pasta.
  3. Drain and rinse immediately under cool running water until the pasta is completely cooled. This stops the cooking process, prevents the pasta from becoming sticky as it cools, and brings the temperature down so it doesn't wilt the vegetables when combined.
  4. The rinsing step is specifically important for pasta salad while rinsing pasta is generally discouraged for hot pasta dishes (it removes starch that helps sauce cling), cold pasta salads specifically benefit from rinsed pasta that stays separate rather than clumping.
  5. Step 2 - Make the Vinaigrette
  6. In a small bowl or jar, combine the olive oil, apple cider vinegar, dried oregano, garlic powder, red pepper flakes, salt, and pepper. Whisk together or shake the sealed jar until emulsified the oil and vinegar should look unified rather than separated.
  7. Taste before adding to the salad the vinaigrette should be tangy, herby, and slightly peppery. Adjust to your preference: more vinegar for tang, more oil for smoothness, more garlic powder for depth.
  8. Add the lemon juice if using it adds brightness and a citrus lift that specifically elevates this dressing beyond the basic vinaigrette flavor.
  9. Step 3 - Assemble the Salad
  10. Pour the cooled, drained pasta into your large mixing bowl. Add the halved cherry tomatoes, diced bell pepper, drained black olives, sliced red onion, and chopped parsley. Add the drained and rinsed chickpeas.
  11. If using cucumber, add the sliced and quartered cucumber now as well.
  12. Pour the vinaigrette over everything and toss gently but thoroughly to coat all components. The goal is even dressing distribution every piece of pasta and vegetable should look lightly coated and glistening.
  13. Step 4 - Taste, Adjust, and Serve
  14. Taste the assembled salad and adjust seasoning. Pasta salads often need a little more salt than you'd expect; the pasta absorbs some of the dressing's saltiness.
  15. Serve immediately at room temperature or chill for 30 minutes first for a colder, slightly more melded result. Both versions work beautifully.
  16. Finish with almond parmesan if using scatter over the top just before serving for a slightly nutty, savory element that adds another flavor dimension.
