  • For the Pasta Salad:
  • 8 oz rotini pasta uncooked (227g) - rotini is the right shape here. Its spiral grooves catch and hold the vinaigrette, so every bite is properly dressed rather than relying on dressing pooling at the bottom of the bowl.
  • ½ green bell pepper diced (¼ cup, 70g) - adds sweetness, crunch, and color.
  • ½ cup cherry tomatoes sliced (95g) - juicy and bright, balancing the richness of the olive oil.

  • Large pot -for boiling the rotini in salted water. Wide enough to give the pasta room to cook evenly without clumping together.

  • Mason jar with a tight lid (or a small bowl) - for the vinaigrette. The jar method is genuinely the fastest way to make a vinaigrette: add everything, seal, shake hard, done.
  • Large mixing bowl - wide enough to combine the cooked pasta with all the vegetables and the dressing, with room to toss without spilling.

Method
 

  1. Stage 1 - Cook the Pasta and Make the Dressing Simultaneously
  2. Bring a large pot of salted water to a boil and cook the rotini according to package directions, usually 8–9 minutes for al dente. While the pasta cooks, use that window efficiently: chop the bell pepper, slice the cherry tomatoes and olives, slice the red onion, and chop the parsley.
  3. Make the vinaigrette at the same time: add the olive oil, balsamic vinegar, lemon juice (or apple cider vinegar), Dijon mustard, salt, and pepper to your mason jar. Seal and shake vigorously for about 20 seconds until fully combined and emulsified. Set aside.
  4. Stage 2 - Drain, Cool, and Combine
  5. Drain the pasta according to package directions, then run it under cold water to stop the cooking and bring it down to room temperature quickly. This step matters warm pasta wilts the fresh vegetables and can make the dressing absorb unevenly.
