And then there's this Vegan Peach and Blueberry Breakfast Parfait — which is layers of homemade maple granola, fresh peach and blueberry fruit mix, and creamy vanilla plant-based yoghurt stacked in a glass and garnished with a mint leaf. Ingredients
  

  • For the Maple Granola:
  • ½ cup steel-cut oats
  • ½ cup regular rolled oats
  • 1 cup slivered or chopped almonds
  • ½ cup honey-roasted sunflower seeds pine nuts, or pepita seeds
  • ½ cup shelled pistachios chopped
  • ½ cup 100% pure maple syrup
  • ¼ teaspoon coarse kosher salt
  • Optional Granola Additions add dried fruit after baking:
  • Dried fruit of your choice
  • Other nut varieties
  • Shredded coconut
  • Ground cinnamon nutmeg, or pumpkin spice
  • For the Fruit Mix:
  • 1 cup fresh blueberries washed and dried
  • 1 cup fresh peaches peeled and chopped (plus one peach wedge per parfait for garnish)
  • ¼ cup dried blueberries
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons agave nectar
  • For Assembly:
  • 2 pints vanilla plant-based yoghurt coconut, soy, or cashew-based — all work beautifully
  • Fresh mint leaves for garnish

Equipment

  • A large baking sheet — lined with parchment or foil. A rimmed baking sheet is better than a flat one so the granola doesn't slide off.
  • A large mixing bowl — for combining the granola ingredients and the fruit mix
  • A wooden spoon or spatula for stirring
  • 4 parfait glasses or tall glasses — clear glasses make the layers visible, which is half the appeal. If you don't have parfait glasses, any tall glass or even a wide mason jar works perfectly.
  • A sharp knife and chopping board for peeling and dicing the peaches and chopping the pistachios
  • Measuring cups and measuring spoons
  • A serving spoon for layering the yoghurt
  • That's genuinely everything. The most specialised thing on that list is a parfait glass, and even that is optional.

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil and spray lightly with cooking oil.
  2. Step 2: Mix together all granola ingredients — both types of oats, almonds, seeds, pistachios, and maple syrup — in a large bowl until everything is well coated.
  3. Step 3: Spread the mixture onto the prepared baking sheet in an even layer. Sprinkle the coarse salt over the top.
  4. Step 4: Bake for 25–30 minutes, or until the granola is golden and crispy. Keep an eye on it from the 20-minute mark — granola goes from golden to burnt faster than you'd expect. Remove from the oven and let it cool completely on the tray. It crisps up further as it cools.
  5. The Fruit Mix
  6. Step 5: Combine the fresh blueberries, chopped peaches, dried blueberries, lemon juice, and agave nectar in a bowl. Stir gently — you want everything coated but you don't want to mash the fruit. Set aside.
  7. Assembling the Parfaits
  8. Step 6: Into each glass or parfait glass, add a layer of the fruit mixture at the bottom.
  9. Step 7: Sprinkle a generous layer of granola over the fruit.
  10. Step 8: Spoon vanilla plant-based yoghurt over the granola.
  11. Step 9: Repeat the layers — fruit, granola, yoghurt — one more time.
  12. Step 10: Garnish the top with a fresh peach wedge, a few extra blueberries, a sprinkle of granola, and a mint leaf. Serve immediately, or refrigerate for up to 10 minutes before serving.
