Method
 

  1. Stage 1 - Prep and Season the Potatoes
  2. Preheat your oven to 425°F. Halve or quarter your baby potatoes depending on their size and place them in a large mixing bowl. Drizzle the olive oil and lemon juice over the potatoes and toss to coat thoroughly. Sprinkle all the spices coriander, cumin, cardamom, salt, paprika, cayenne, and black pepper over the potatoes and toss again until every piece is evenly coated.
  3. Stage 2 - Arrange and Roast
  4. Pour the potatoes onto your large sheet pan and spread them into a single layer, starting with most of the potatoes cut-side down this maximizes the flat surface contact with the hot pan, which is where the best browning happens. Sprinkle the chopped garlic over the potatoes and spread the lemon wedges evenly across the pan as well.
  5. Bake for 20 minutes, then toss the potatoes and continue baking for about 20 more minutes, until tender throughout and golden brown on the cut sides.
  6. Stage 3 - Make the Sauce While the Potatoes Roast
  7. While the potatoes are in the oven, make the yogurt sauce: add all the sauce ingredients to a small bowl vegan yogurt, grated garlic, cumin, lemon juice, salt, and pepper and whisk to combine until smooth.
  8. Stage 4 - Assemble and Serve
  9. Once the potatoes are done, build your bowl: spread some hummus at the bottom, top with roasted potatoes, add a protein of choice if you're using one, and drizzle the yogurt sauce on top. Squeeze the roasted lemons directly over the potatoes for that final burst of caramelized citrus, then discard the lemon rinds.
