Ingredients

  • A simple elegant list that lets quality ingredients lead:
  • 1 pound baby potatoes quartered
  • 2 tablespoons olive oil
  • 2 cloves garlic finely minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh thyme leaves chopped
  • ⅔ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Crushed red pepper flakes optional

Equipment

  • Primary Equipment
  • Rimmed baking sheet - the essential piece. A rimmed sheet prevents any olive oil from running off the edges into the oven. A standard 18"x13" half-sheet pan comfortably holds 1 pound of quartered baby potatoes in a single layer.
  • Parchment paper - for lining the baking sheet. This is specifically recommended for easy cleanup and for preventing any herb-garlic coating from burning onto the pan surface. Silicone baking mats work equivalently.
  • Oven at 390°F/200°C - a slightly lower temperature than the ultra-crispy roasted potato recipe elsewhere in this series. 390°F produces golden, properly roasted potatoes with tender interiors without the risk of burning the fresh herb coating.

Method

  1. Step 1 - Preheat and Prepare the Pan
  2. Preheat the oven to 390°F/200°C. Line a rimmed baking sheet with parchment paper. Set aside.
  3. Why parchment specifically for this recipe- The herb-garlic coating is more prone to burning and sticking than plain oil-roasted potatoes. Parchment paper creates a non-stick layer that prevents the herbs from scorching onto the pan surface and makes cleanup effortless — which is meaningful on Christmas day when you have other dishes to manage.
  4. Step 2- Quarter the Baby Potatoes
  5. Cut each baby potato in half through the middle (widthwise), then cut each half in half again to produce quarters. This creates flat cut surfaces that contact the baking sheet directly more contact surface area means more golden-brown caramelization on each potato piece.
  6. Size considerations- Baby potatoes vary significantly in size. Very small ones (the size of a cherry tomato) may only need halving. Very large ones (close to golf ball size) may benefit from being cut into sixths. The goal is pieces that are approximately ¾ to 1 inch uniform in size for even cooking.
  7. Step 3 - Combine Everything in the Bowl
  8. Add the quartered potatoes, olive oil, minced garlic, chopped rosemary, chopped parsley, chopped thyme leaves, salt, black pepper, and optional red pepper flakes to the large bowl.
  9. Toss gently until every potato piece has an even visible coating of the herb-oil mixture. Every surface should glisten with oil and show visible herb coverage.
  10. The garlic distribution-Minced garlic has a tendency to clump together in oil — make sure it distributes evenly throughout the mixture rather than collecting in one spot. A few extra tosses after the initial coating specifically address this.
  11. Step 4 - Arrange in Single Layer
  12. Pour the seasoned potatoes onto the parchment-lined baking sheet. Spread them into a single even layer with the cut sides facing down where possible.
  13. The single layer rule is non-negotiable for proper roasting. Potatoes stacked or crowded on the pan trap steam between them and each other they steam-cook rather than roast, producing soft exteriors instead of the golden-brown caramelized ones you want. If 1 pound of potatoes doesn't fit in a single layer on your pan, use two pans.
  14. Step 5 - Roast with Mid-Point Stir
  15. Roast at 390°F/200°C for approximately 20 minutes, stirring halfway through the cooking time (at the 10-minute mark).
  16. The halfway stir serves two purposes: it rotates the potato pieces so different sides contact the pan surface, producing more even browning, and it redistributes any garlic or herbs that may have settled to the pan rather than staying on the potatoes.
