Equipment

  • Large rimmed baking sheet (sheet pan) - the single essential piece of equipment; "rimmed" matters because the oil and potato juices need to stay on the pan rather than dripping into the oven floor; a half-sheet pan (18x13 inches) is ideal for 1.5 pounds of potato wedges in a single layer
  • Parchment paper - for lining the sheet pan; the vegan parmesan crisps onto the parchment and lifts off cleanly; without parchment, the cheese fuses to the pan and becomes a very committed art project to remove
  • Large mixing bowl - for tossing the wedges with oil, seasoning, and parmesan; the bowl needs to be large enough to toss everything without potato wedges launching themselves onto the counter
  • Your hands - genuinely the best tool for evenly coating potato wedges; a spoon or spatula misses the undersides and between the wedges; hands get into every surface and ensure every bit of parmesan and seasoning sticks where you want it
  • Tongs or a wide spatula - for the halfway flip; tongs give you more control and less chance of accidentally dragging the crispy coating off the bottom of the wedge when flipping

Method
 

  1. Step 1- Preheat and Prepare the Pan
  2. Preheat your oven to 400°F (205°C). Line your sheet pan with parchment paper. The parchment needs to lie completely flat against the pan surface any bubbles or folds under the parchment create uneven contact with the potato wedges and produce uneven browning.
  3. Step 2- Cut the Wedges
  4. Wash your Yukon Gold potatoes (don't peel them). Cut each potato in half lengthwise, then cut each half into 3–4 wedges depending on the size of the potato. All wedges should be roughly the same thickness about ¾ to 1 inch at the widest point. Inconsistent wedges mean some cook through while others remain underdone. A consistent cut across the whole batch produces consistent results.
  5. Step 3- Season and Coat
  6. Add all the wedges to your large mixing bowl. Pour 2 tablespoons of avocado oil over them and use your hands to toss thoroughly every surface of every wedge needs oil coverage for proper browning. Add the garlic powder, garlic salt, dried oregano, and black pepper and toss again until the seasonings coat every wedge evenly.
  7. Now add the ½ cup of grated vegan parmesan and toss one more time. The parmesan will cling to the oiled, seasoned surfaces press it gently onto any wedges where it hasn't fully adhered. Every wedge should have visible parmesan on at least two surfaces.
  8. Step 4- Arrange on the Sheet Pan
  9. Transfer the coated wedges to your prepared sheet pan. Lay each wedge skin-side down or on its flattest surface this maximizes the contact area between the potato and the pan, which is where the crispiest browning happens. Space the wedges so they don't touch each other touching wedges steam at the contact points and you'll get a soft patch right where the crunch should be.
  10. Spreading evenly across the full surface of the sheet pan, with clear space between each wedge, is the single most important arrangement step for achieving maximum crispiness.
  11. Step 5- Bake and Flip Once
  12. Place the sheet pan on the center rack of your oven. Bake for 20 minutes until the undersides are deeply golden. Remove the pan carefully and use your tongs to flip every wedge to its second flat side. Return to the oven and bake for a further 20 minutes until the second side is equally golden and the parmesan has crisped into a beautiful, slightly caramelized coating on both sides.
  13. The center rack position ensures even heat from above and below without the top heating element burning the parmesan coating before the potato interior cooks through.
  14. Step 6- Serve with Parsley and Dipping Sauces
  15. Remove from the oven. Scatter fresh chopped parsley generously across all the wedges the green against the deep golden parmesan coating looks genuinely beautiful. Serve immediately while the parmesan coating is at peak crispiness.
