Vegan Sheet-Pan Spring Veggies with Crispy Tofu (Vegan)

Ingredients
  

  • For the Lemon Garlic Tofu
  • 14 –16 oz extra-firm tofu pressed and cut into triangles
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • For the Vegetables
  • 1 1/2 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Black pepper to taste
  • 1/2 tsp salt
  • 1 bunch asparagus ends trimmed and cut into 2” pieces
  • 8.5 oz canned artichoke hearts drained, rinsed, halved
  • 4 oz radishes trimmed and halved
  • 2 tbsp chopped fresh dill
  • Lemon Pepper Orzo or cooked rice for serving (optional)

  • Large rimmed baking sheet
  • Silicone baking mat or parchment paper
  • Medium bowl for marinating tofu
  • Medium bowl for tossing vegetables
  • Measuring spoons and cups
  • Sharp knife and cutting board
  • Spatula or tongs
  • Bold tip: use a rimmed sheet to catch juices so nothing drips onto your oven floor (you’ll thank me later).

Method
 

  1. Prep and marinate the tofu
  2. Cut the pressed tofu into small triangles and place them in a shallow container. Whisk 2 tbsp olive oil, 2 tbsp lemon juice, 1/2 tsp garlic powder, 1/2 tsp black pepper, and 1/2 tsp salt in a small jar until emulsified. Pour the marinade over the tofu and toss gently to coat. Marinate 15 minutes (or refrigerate overnight for deeper flavor).
  3. Preheat and prepare the pan
  4. Preheat your oven to 415°F (215°C). Line a large baking sheet with a silicone mat or parchment paper. Arrange tofu pieces with about 2" between them so hot air can crisp each side.
  5. Bake the tofu (first roast)
  6. Bake tofu on the top rack for 20 minutes. The outside should crisp while the inside stays tender. While the tofu bakes, whisk together the vegetable seasoning.
  7. Season the vegetables
  8. In a medium bowl, whisk 1 1/2 tbsp olive oil, 1 tsp Dijon, 1/2 tsp garlic powder, salt and pepper. Add asparagus, artichoke hearts, and radishes and toss to coat evenly.
  9. Combine and finish roasting
  10. Flip the tofu, push it to one third of the baking sheet, and spread the veggies across the remaining two thirds. Return the sheet to the oven and roast for another 15–20 minutes until the asparagus turns bright and the radishes lightly brown at the edges.
  11. Finish and serve
  12. Remove the sheet from the oven, sprinkle 2 tbsp fresh dill over everything, and optionally fling cooked Lemon Pepper Orzo or rice onto plates. Plate the tofu and veggies, add a squeeze of fresh lemon if you like, and serve warm.

Notes

Pro tips for crispy tofu & perfect veggies

  • Press tofu well. Wrap in towels and place a weighted pan on top for 15–20 minutes. Water ruins crispness.
  • Don’t overcrowd the pan. Overcrowding steams food instead of roasting it. Give pieces breathing room.
  • Cut similar-sized pieces. Uniform pieces cook evenly and finish at the same time.
  • Rotate the pan once. If your oven has hot spots, rotate at the halfway point for even browning.
