Vegan Spring Vegetable Paella with Chickpeas (Vegan)

Ingredients
  

  • 1/4 cup + 2 tbsp extra-virgin olive oil divided
  • 1 yellow onion finely chopped
  • 1 red bell pepper thinly sliced
  • 8 oz cremini mushrooms sliced
  • 3 garlic cloves minced
  • 1 1/2 tsp paprika smoked or sweet, your call
  • 1 tsp saffron threads
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 cup dry U.S.-grown short-grain white rice e.g., bomba or Calrose
  • 1 15-oz can chickpeas, rinsed and drained (about 240 g)
  • 1 15-oz can diced fire-roasted tomatoes
  • 1 cup dry white wine optional but lovely
  • 2 1/2 cups vegetable broth hot
  • 1/2 cup frozen green peas thawed
  • 1/4 cup finely chopped fresh parsley
  • Zest and juice of 1 lemon
  • 1/3 cup sliced green olives optional (Castelvetrano work great)
  • Bold tip: use short-grain rice so the dish achieves that slightly creamy starchy finish.

  • Large high-sided skillet or paella pan with a fitted lid (about 12–14 inches)
  • Wooden spoon or spatula

  • Citrus zester/juicer
  • Chef’s knife and cutting board
  • You don’t need a fancy paella pan, but the wide surface helps rice cook evenly and form that coveted crust at the bottom (socarrat). If you get it right, you’ll feel like a culinary sorcerer.

Method
 

  1. Heat and soften the aromatics
  2. Heat 1/4 cup olive oil in your skillet over medium-high heat. Add the chopped onion, sliced red pepper, and sliced mushrooms. Cook 7–8 minutes, stirring often, until the vegetables soften and smell sweet.
  3. Add garlic, spice, and saffron
  4. Stir in the minced garlic, 1 1/2 tsp paprika, saffron threads, 1 tsp salt, and 1/2 tsp black pepper. Cook for about 2 minutes to toast the spices and wake up the saffron. The kitchen will start to smell like a vacation.
  5. Deglaze with wine (optional)
  6. Pour in 1 cup dry white wine and let it reduce for 2–3 minutes. If you don’t drink wine or avoid it in cooking, use a splash of extra broth instead — still good.
  7. Toast the rice
  8. Add 1 1/2 cups short-grain rice and stir 2–3 minutes until the rice turns translucent on the edges. Toasting helps the grains stay separate and firm.
  9. Add chickpeas, tomatoes, and broth
  10. Stir in the rinsed chickpeas, fire-roasted tomatoes, and 2 1/2 cups hot vegetable broth. Bring the pan to a low boil, then reduce heat to a gentle simmer. Cover and cook for 25 minutes without stirring much. Let the rice absorb the liquid and develop texture.
  11. Finish with peas and parsley oil
  12. Mix 1/4 cup parsley, lemon zest, lemon juice, and the remaining 2 tbsp olive oil in a small bowl to make a quick parsley oil. After the rice finishes the covered cook, remove the lid and cook for 5 more minutes to tighten the top layer. Scatter the parsley oil over the paella, add 1/2 cup thawed peas, and scatter olives if you like.
  13. Rest, garnish, and serve
  14. Let the paella rest 5 minutes off the heat. Serve warm with extra lemon wedges and a final drizzle of olive oil.
