Vegan Zucchini Oat Waffles

Vegan Zucchini Oat Waffles (Healthy Breakfast!) Summer Morning Recipe

Every summer, zucchini reaches a point where you have more of it than you know what to do with. You've made zucchini soup, zucchini fritters, zucchini pasta, and at least one dish where you tried to pass off zucchini as something else entirely. Vegan Zucchini Oat Waffles are the answer that actually makes everyone at the breakfast table excited rather than suspicious. Shredded zucchini disappears into a lightly sweetened, cinnamon-spiced waffle batter that cooks golden and crispy on the outside, tender on the inside, and delivers a hidden vegetable serving in every single waffle. Even the most dedicated zucchini-skeptic won't know it's there.

Ingredients

  • A straightforward ingredient list that comes together quickly:
  • The Zucchini:
  • 1 medium zucchini shredded - approximately 1 cup after shredding, with excess liquid removed
  • The Dry Ingredients:
  • 1½ cups flour -all-purpose; see gluten-free option below
  • ¼ cup sugar - granulated
  • ½ teaspoon cinnamon
  • 1 tablespoon baking powder - provides the lift for light airy waffles
  • The Wet Ingredients Vegan Versions:
  • 2 flax eggs 2 tbsp ground flaxseed + 6 tbsp water, rested 5 minutes
  • 1 teaspoon vanilla extract
  • 1½ cups plant-based milk
  • For the Waffle Maker:
  • Cooking spray

Equipment

  • The waffle maker is the essential piece of equipment:
  • Waffle Maker Options
  • Mini waffle maker - the recipe's primary recommendation and genuinely the best choice for these zucchini waffles. Mini waffles cook faster (3–4 minutes versus 5–6 minutes for full-size), create more servings from the same batter, and are perfectly sized for kids or for stacking multiple waffles on an adult plate. Mini waffle makers are compact, affordable (typically $15–30), and store easily.
  • Full-size waffle maker - works well for this recipe. Use approximately ⅓ cup of batter per waffle. Cook time increases to 5–6 minutes. Produces 4–5 full-size waffles from this recipe rather than 16 mini waffles.
  • Belgian waffle maker - the deeper grid pockets fill with maple syrup in a particularly satisfying way. Use slightly more batter per waffle (approximately ½ cup) and allow 6–7 minutes cook time.

Method

  1. Step 1 - Prepare the Zucchini
  2. Shred the medium zucchini on the large holes of a box grater into a bowl. Transfer to paper towels and squeeze out excess liquid thoroughly. Transfer the pressed zucchini to your medium mixing bowl. You should have approximately 1 cup of shredded, pressed zucchini.
  3. Step 2 - Prepare Flax Eggs (If Making Vegan Version)
  4. In a small bowl, mix 2 tablespoons of ground flaxseed with 6 tablespoons of water. Stir well and let rest for 5 minutes until the mixture develops a gel-like consistency. Prepare this before mixing the batter so it's ready when needed.
  5. Step 3 - Combine Dry Ingredients
  6. In a separate bowl, whisk together the flour, sugar, cinnamon, and baking powder until fully combined and no clumps of baking powder remain. The whisking ensures even distribution so every waffle has the same lift and flavor.
  7. Step 4 - Prepare Wet Ingredients
  8. In another bowl, whisk together the flax eggs, vanilla extract, and plant-based milk until smooth.
  9. Step 5 - Combine Everything
  10. Add the dry ingredients to the bowl containing the pressed zucchini shreds. Stir to partially combine. Add the wet ingredients and stir to combine everything into a unified batter. Stir until just combined some small lumps are acceptable. Overmixed waffle batter develops gluten and produces tough rather than tender waffles.
  11. Let the batter rest for 5 minutes while the waffle maker heats. This resting period allows the baking powder to activate partially and the flaxseed egg to integrate more completely.
  12. Step 6 - Cook the Waffles
  13. Preheat your waffle maker and spray with cooking spray. For mini waffles, add 2–4 tablespoons of batter per waffle. For full-size waffles, add approximately ⅓ cup.
  14. Cook until golden brown on both sides approximately 3–4 minutes for mini waffles or 5–6 minutes for full-size. The waffles are done when they release cleanly from the iron without tearing and the surface feels firm and golden.
  15. Don't open the waffle maker too early- Opening before the steam stops emerging usually tears the waffle. Wait for the steam to reduce significantly before checking.
  16. Step 7 - Serve Immediately
  17. Remove from the waffle maker and serve immediately. Top with vegan butter, maple syrup, and fresh summer fruit. Waffles cool and lose their crispness within minutes eat them ho
