Stage 1 - Preparation
Preheat the oven to 400°F (205°C). Line a large baking sheet with parchment paper.
Peel and core the apple. Slice into 24 thin, uniform slices from the ½ apple. Lay the slices on the cutting board and pat them dry if they're releasing juice excess moisture prevents proper caramelization.
Mix the brown sugar and apple pie spice in a small bowl until evenly combined. The mixture should look and smell like concentrated apple pie filling.
Prepare the puff pastry. Unfold the thawed sheet and cut into 6 equal pieces, approximately 3"x4.5" each. If the pastry sheet is slightly smaller than needed for even cutting, use a rolling pin to gently extend it slightly. Dust off any excess flour from the pastry surface with a pastry brush or dry hand.
Thawing tip- Thaw puff pastry in the refrigerator overnight rather than at room temperature. Refrigerator-thawed pastry stays firm and cold, which is specifically the state it needs to be for proper layering and puffing in the oven. Room temperature-thawed pastry gets warm and soft, which compromises the butter (or vegetable fat) layers that create the flaky puff.
Stage 2 - Assembly (The Upside-Down Magic)
Place 1 teaspoon of the spiced brown sugar mixture directly on the parchment-lined baking sheet in a rectangle approximately the size of one puff pastry piece.
Arrange 4 apple slices over the sugar in a shingled (overlapping) pattern each slice overlapping the previous by about one-third. The slices should fit within the planned pastry area.
Sprinkle another teaspoon of spiced brown sugar over the top of the apple slices.
Place one puff pastry piece on top of the apple-sugar stack, pressing the edges down gently to adhere. Use a fork to press and create indentations around all four edges this seals the pastry slightly and creates the decorative border that becomes visible on the plated side after flipping.
Repeat this assembly process five more times across the baking sheet.
Optional vegan egg wash- If using, brush plant milk or aquafaba lightly over the tops of each pastry piece. Sprinkle with turbinado sugar if desired.
Stage 3 - The Bake
Bake at 400°F for 18-20 minutes until the tops of the puff pastry pieces are deeply golden brown.
Monitoring during baking- Watch the pastry color rather than just the timer. Puff pastry browning time varies based on specific brand, oven calibration, and how well the pastry was thawed. At 18 minutes, check you want deep golden brown, not pale yellow.
What's happening underneath- While the pastry bakes above, the brown sugar below the apple slices melts and caramelizes in contact with the parchment and the heat. By the time the pastry is golden, the sugar beneath has transformed into a concentrated caramel that coats the apple slices and will become the stunning top surface after flipping.
Stage 4 - The Reveal Flip
Remove the baking sheet from the oven. Allow to cool for exactly 2-3 minutes long enough for the caramel to begin setting slightly so it doesn't run, but not so long that it hardens completely and the tarts become difficult to separate from the parchment.
Work quickly and with confidence. Slide a thin spatula under each tart, getting beneath the parchment rather than trying to separate the tart from it first. Flip each tart in one decisive motion onto the serving plate or cooling rack.
The flip timing is genuinely important. Too soon (right from the oven), the caramel is completely liquid and spreads everywhere. Too late (after 5+ minutes), it hardens into a crystallized state. The 2-3 minute window produces caramel at exactly the right consistency slightly set, slightly glossy, perfectly coating the apple surface.
