Muddle the mint
Place 2 mint leaves in the bottom of your glass. Press them gently with a muddler or the back of a wooden spoon. Don’t pulverize them; you want oils and aroma, not bitter bits. Ask yourself: do I want mint confetti in every sip? If the answer is yes, go harder.
Add ice and juice
Fill the glass about one-third with ice. Pour 3/4 cup watermelon juice over the ice. If you made the juice earlier, give it a quick stir before pouring.
Top with fizz
Pour 1/2 cup club soda on top for sparkle. Give the drink a gentle stir to combine the flavors. Garnish with a small watermelon slice and a mint sprig. I always add one more mint leaf for the photo — old habits die hard.
Sip and enjoy
Sip slowly or hand it to your friend and watch their expression change to "this is so refreshing." You nailed it.
How to make watermelon juice (fast and clean)
Method A — Blender: Cube seedless watermelon. Put about 1 cup cubed watermelon into a blender and pulse until smooth. Strain through a fine-mesh strainer if you want clear juice. Measure 3/4 cup for the mocktail.
Method B — Juicer: Feed watermelon cubes through your juicer and measure.
Tip: Chill the watermelon beforehand for extra crispness. I throw chunks in the freezer for 10–15 minutes if I forget to chill — works like a charm.
Wondering about seeds? Remove them, or blend and strain — either way works. I usually skip straining because I like a bit of pulp.
