Vegan Raspberry Chia Overnight Oats  Summer Breakfast Recipe

No cooking. No alarm-induced kitchen panic. No sad granola bar grabbed on the way out the door. Vegan Raspberry Chia Overnight Oats is the summer breakfast that takes 5 minutes the night before and pays you back with a gorgeous, creamy, raspberry-loaded jar every single morning.

I started making overnight oats during a particularly brutal summer when turning on the stove before 9 AM felt genuinely unreasonable. Five minutes of stirring things into a jar, a night in the fridge, and breakfast was handled. One week in, I stopped thinking about any other breakfast option. That was over two years ago and this raspberry version is still my most-made recipe.

What Are Vegan Raspberry Chia Overnight Oats?

Vegan Raspberry Chia Overnight Oats are a no-cook breakfast made by combining rolled oats, chia seeds, plant milk, maple syrup, vanilla extract, and fresh or frozen raspberries in a jar  then refrigerating overnight until the oats soften and the chia seeds swell into a thick, creamy, pudding-like texture.

The raspberries get partially mashed into the mixture, which turns the whole jar a beautiful deep pink and infuses every spoonful with fruity, slightly tart flavor. The remaining berries sit on top as a fresh garnish. It’s genuinely one of the prettiest breakfasts you can make with zero effort.

It’s:

  • 100% vegan– plant milk, maple syrup, no animal products anywhere
  • Ready in 5 minutes of active prep
  • Serves 1 – scale up easily for multiple jars
  • 487 kcal per serving – a proper, filling breakfast
  • Meal-prep friendly for up to 3–4 days in the fridge

Kitchen Equipment You’ll Need For

This might be the shortest equipment list on the entire blog:

  • Small jar with a lid – A 400–500ml mason jar is ideal. The lid keeps everything fresh overnight and means you can eat straight from the jar the next morning without extra washing up. A small bowl with cling film works too, but the jar is the move.
  • Spoon or small spatula – For stirring everything together and mashing the raspberries into the mixture.
  • Measuring cups and spoons – For the oats, chia seeds, maple syrup, and milk. Once you’ve made this a few times, you’ll eyeball it.
  • Refrigerator -Obviously. But worth noting: at least 4 hours of chill time is needed for the chia seeds to fully hydrate and the oats to soften properly. Overnight is the easiest approach.

That’s genuinely it. No blender, no stove, no special equipment. Just a jar and a fridge.

Ingredients

  • ½ cup (50g) rolled oats  old-fashioned oats, not instant
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup (or 1 chopped Medjool date)
  • ½ teaspoon vanilla extract (or almond or lemon extract)
  • 1 pinch sea salt
  • ¾ cup (180ml) plant milk of choice
  • Heaping ⅓ cup (about 46g / 12 raspberries) raspberries, divided  fresh or frozen
  • Optional- 1 tablespoon flaked almonds or shredded coconut

How to Make Vegan Raspberry Chia Overnight Oats

Step 1- Layer Everything into the Jar

Add the rolled oats, chia seeds, maple syrup, vanilla extract, sea salt, plant milk, optional almonds or coconut, and approximately half the raspberries to your jar. Don’t worry about being precise with the raspberry split  roughly half in, half reserved for the top.

Step 2- Smash and Stir

This is the most important step and the most satisfying one. Use your spoon to smash the raspberries into the mixture as you stir. You’re not going for a smooth puree  you want visible raspberry pieces throughout, with the juice turning the whole mixture pink. Stir well enough that the chia seeds and oats distribute evenly and nothing is sitting in a dry clump at the bottom.

Step 3- Top and Refrigerate

Place the remaining raspberries on top of the mixture  these stay whole and fresh, giving you a beautiful pop of color when you open the jar in the morning. Seal with the lid and refrigerate for at least 4 hours, or ideally overnight (8 hours). The longer it sits, the creamier and more cohesive the texture gets.

Step 4- Grab and Eat

In the morning, pull the jar out of the fridge. Eat straight from the jar or spoon into a bowl  no reheating needed, no extra prep required. If the texture feels thicker than you like, stir in a splash of extra plant milk to loosen it up.

Let’s talk about those numbers for a second. 18g of protein, 15g of fiber, and 487 kcal from a breakfast that took 5 minutes to assemble the night before  that’s genuinely impressive for a plant-based meal. The protein comes from the oats, chia seeds, and plant milk combined. The fiber is doing serious digestive work. And the calcium (391mg) covers a meaningful chunk of your daily requirement. IMO, this is one of the most nutritionally efficient breakfasts in plant-based eating.

Why Rolled Oats  Not Instant

This matters more than people expect. Rolled oats (old-fashioned oats) hydrate overnight into a thick, pleasantly chewy texture that holds up in the jar without going mushy or gluey. Instant oats hydrate too quickly and turn soft and porridge-like  fine for hot oats, wrong texture for overnight.

Steel-cut oats go the other direction  they stay too firm even after overnight soaking and need cooking to properly soften. Stick with rolled oats for the ideal overnight oat texture every time.

Choosing the Right Plant Milk

The plant milk you use changes the flavor and texture of the final jar more than you’d think. Here’s how the main options compare:

  • Oat milk -Naturally creamy, slightly sweet, and the closest to dairy milk in texture. The top choice for overnight oats. It makes the jar taste indulgent without adding anything heavy.
  • Soy milk – Highest in protein of all plant milks (~7g per cup). Neutral flavor, creamy texture, excellent for boosting the nutritional profile.
  • Coconut milk (carton, not canned) – Adds a subtle tropical richness that works beautifully with the raspberry flavor. Use the lighter carton version, not full-fat canned.
  • Almond milk – Lighter and thinner than oat or soy. Works fine but produces a slightly less creamy result.
  • Cashew milk – Rich, neutral, and creamy. A great option if you want a thick, dessert-like texture.

FYI  whichever milk you use, make sure it’s unsweetened unless you want to compensate by reducing the maple syrup.

The Chia Seed Factor  Why They Matter

Chia seeds aren’t just a trendy topping. In overnight oats, they serve a specific functional purpose they absorb liquid, swell up, and create the thick, pudding-like consistency that makes overnight oats so satisfying. Without them, the texture stays loose and porridge-thin.

One tablespoon of chia seeds also adds:

  • ~5g of fiber
  • ~3g of plant protein
  • Omega-3 fatty acids
  • Calcium and magnesium

They’re doing nutritional work and textural work simultaneously. Don’t skip them and don’t reduce the quantity  one full tablespoon is what the recipe needs for the right consistency.

Fresh vs. Frozen Raspberries  Which Is Better?

Both work, and the answer depends entirely on the season and what you have.

Fresh Raspberries

  • Better texture and flavor at peak season (summer)
  • The smashed ones create a brighter, more vibrant color in the jar
  • The whole ones on top look more beautiful for photos (not that that’s the point  but it’s a nice bonus)

Frozen Raspberries

  • Available year-round at a consistent price
  • No need to defrost before using  add them straight from the freezer
  • They release more juice as they thaw overnight, which actually deepens the pink color and raspberry flavor throughout the jar
  • Slightly softer texture in the morning

For summer, fresh is ideal. For the rest of the year  or when fresh raspberries cost a small fortune  frozen is genuinely excellent.

Sweetener Options and How They Compare

The recipe calls for maple syrup, but you have good options:

  • Maple syrup – The standard. Mild, caramel-adjacent sweetness that doesn’t compete with the raspberry flavor. Use 1 tablespoon.
  • Medjool date (1, chopped) – The whole-food option. Add a pitted, chopped Medjool date directly to the jar. It softens overnight and sweetens naturally  plus adds extra fiber and potassium. This is the better nutritional choice.
  • Agave nectar – 1:1 substitute for maple syrup. Slightly more neutral in flavor.
  • No sweetener – Completely valid if your raspberries are ripe and sweet, or if you prefer a less sweet breakfast. The vanilla extract carries a lot of the perceived sweetness anyway.

Variations to Try

Once you nail the base recipe, here’s how to keep things interesting:

  • Raspberry Almond – Use almond extract instead of vanilla, top with flaked almonds and a drizzle of almond butter
  • Raspberry Coconut – Add 1 tablespoon of shredded coconut to the jar and use coconut milk for a tropical twist
  • Raspberry Chocolate – Add 1 teaspoon of raw cacao powder to the mixture  the chocolate-raspberry combination is outstanding
  • Mixed Berry – Use a combination of raspberries, blueberries, and strawberries for a more complex berry flavor
  • Raspberry Lemon – Use lemon extract instead of vanilla and add a teaspoon of lemon zest  bright, tangy, and perfect for summer

Meal Prep for the Week

This recipe scales up effortlessly. Make 4–5 jars on Sunday night and you have breakfast handled for the entire workweek  no decisions, no prep, just open the fridge and go.

A few things to note for multi-jar prep:

  • Use the freshest raspberries you can find  the shelf life of the jars depends on how fresh the fruit was when you made them
  • Jars keep in the fridge for 3–4 days make Monday through Thursday on Sunday, make Friday’s on Thursday
  • Keep toppings separate if you want maximum freshness  add the reserved whole raspberries and any nuts or coconut each morning rather than storing them in the jar
